Ingredients

  • 1 cup peanut butter; smooth or crunchy
  • 1 whole egg
  • 1/4 cup oat flour
  • 1/4 cup pure maple syrup
  • 1/4 cup chocolate chips (optional)

Instructions

  • Preheat oven to 350 degrees F and line 2 cookie sheets with a silpat mat or parchment paper. In a large mixing bowl mix together peanut butter, egg, oat flour and maple syrup until incorporated.
  • Using a medium cookie scoop or scoop 2 tablespoons of cookie dough on the baking sheet about 2 inches apart. Gently press down on the cookie dough ball with your fingers or use a fork. Add a few chocolate chips to the top of each cookie and bake for 14-15 minutes, until set.
  • Let the cookies cool for a few minutes and enjoy!
