Roasted Garlic

  • 1 whole whole bulb garlic
  • 1 Tbsp. olive oil
  • 1/4 tsp. salt

Hummus

  • 2 - 15.5 oz. cans chickpeas (garbanzo beans); rinsed and drained
  • 1/2 cup olive oil
  • 2 1/2 Tbsp. lemon juice
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 1/4 cup ice cold water
  • 2 tsp. sesame oil or tahini

Seasoned pita bread

  • 3 whole pita (I used whole wheat)
  • 2 1/2 Tbsp. olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. dried oregano
  • 1/4 tsp. garlic powder
  • 1/4 tsp. dried basil

Instructions

To make the roasted garlic

  • Preheat oven to 425 degrees F. Peel away any loose layers of the garlic and cut 1/4 inch off the top of the garlic. Drizzle with 1 tablespoon of olive oil and a pinch of salt. Wrap the garlic in foil leaving room around the garlic. Bake for 45 minutes until the garlic cloves are softened- you can check by piercing a knife in the garlic. Let bake for another 5 minutes if it's not all the way softened. Let cool for at least 20 minutes.

How to make seasoned pita bread

  • Preheat oven to 400 degrees F. In a small bowl mix together the herbs. Line a baking sheet with foil and place the pita bread on top. Brush on the olive oil on the pita bread and top with the seasonings. Bake for 10 minutes and let cool. Slice into 8 and enjoy with hummus.

How to make roasted garlic hummus

  • In a food processor add the chickpeas, olive oil, lemon juice, salt, pepper, garlic powder, water, sesame oil OR tahini. Pulse together for 1 minute and then add the roasted garlic by squeezing the cloves out of each garlic clove. Process for 4-5 minutes until the hummus is smooth. Serve with seasoned pita bread, chips or veggies. Enjoy!
