Cilantro Lime Chicken with Avocado Salsa

Cilantro Lime Marinade
- 1.5 pounds Foster Farms Simply Raised Air Chilled Chicken; thin sliced breast fillets; about 4 or 5
- 4 whole limes; plus the zest of 2 whole limes
- 1/4 cup oil
- 1/3 cup cilantro; packed and chopped
- 1 Tbsp. honey, melted
- 1 Tbsp. garlic; minced
- 1/2 tsp. salt
- 1/4 tsp. black pepper
Avocado Salsa
- 1 large avocado or 2 small; cubed
- 1 roma tomato; seeds removed and diced
- 1/4 cup red onion; diced
- 1 tsp. fresh lime juice
- 1/4 tsp. garlic powder
- salt and pepper to taste
- 1- 1/2 jalapeno; finley minced (optional for spice)
To make Cilantro Lime Chicken
In a medium bowl, whisk together the lime juice, lime zest, oil, cilantro, honey, garlic, salt, and pepper.
Add the chicken to the marinade and massage for a minute with your hands. Add the chicken and the marinade to a large ziplock bag and place in the refrigerator for 30 minutes to 3 hours.
When ready to grill, remove the chicken from the refrigerator and heat a grill on medium high heat if using an indoor grill. Lightly coat the grill with olive oil and grill the chicken on each side for 7-8 minutes. When ready the internal temperature will be 165 degrees Fahrenheit. Make the avocado salsa and spoon onto tops of the grilled chicken.
To make Avocado Salsa
Add the avocado, tomato, red onion, lime juice and garlic powder in a medium bowl. Add salt and pepper to taste and stir together. Top the avocado salsa on top of the grilled Cilantro Lime Chicken
