- 6 cups rice krispies or crispy rice cereal
- 1/2 cup salted butter
- 16 ounces mini marshmallows
- 1/2 teaspoon vanilla extract
- 2 cups white chocolate chips divided
- rainbow sprinkles optional
Line a 13×9 inch pan with foil or parchment paper and grease with butter or nonstick cooking spray.
Bring a large pot or stock pot to low heat. Add butter and melt. Add the 16 ounce bag of mini marshmallows and stir until melted. Add vanilla extract. Stir again until the ingredients are completely combined and melted together.
Remove the pot from heat and stir in the rice krispie cereal until the marshmallow mixture completely coats the cereal. Stir in 1 cup of white chocolate chips.
Add the mixture to the prepared pan and gently press the mixture into the pan. Make sure you don't press too hard otherwise your treats will be too dense and hard.
In a microwavable bowl, melt remaining 1 cup of white chocolate chips with a 1/2 teaspoon of coconut oil to help melt chocolate. Melt in 30 second intervals until melted.
Drizzle the top with melted white chocolate and rainbow sprinkles (optional). Let sit for 30-60 minutes, slice into 24 squares and enjoy!
