Ingredients

  • 1/2 cup salted butter softened at room temperature
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract or vanilla bean paste
  • 1 whole egg
  • 1 egg yolk
  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/3 cup white chocolate chips
  • 1/3 cup peanut butter chips
  • 1/3 cup milk chocolate chips
  • 1/3 cup mini chocolate chips optional

Instructions

  • Preheat oven to 350 degrees F and line 2 baking sheets with parchment paper.
  • In a large mixing bowl with an electric mixer or in the bowl of a stand mixer with a paddle attachment, cream the butter and sugars together until light, fluffy and smooth.
  • Add in egg, egg yolk, and vanilla paste or extract. Continue to beat until combined.
  • In a medium bowl, whisk together the flour and baking soda.
  • Add the flour mixture to the wet mixture and mix until cookie dough barley starts to form.
  • Add in all of the chocolate chips and continue mixing just until combined. Be sure not to over-mix.
  • Use a medium ice cream scoop to form cookie dough balls (equivalent to about 2 tablespoons). Place on prepared cookie sheet place 2 inches apart. *I like to top my cookie dough balls with a few chocolate chips for a prettier look.
  • Bake for 10-12 minutes and let cookies cool for a few minutes, then cool completely on a wire cooling rack. Enjoy!
