Servings: 21 cookies
- 1/2 cup salted butter softened at room temperature
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon pure vanilla extract or vanilla bean paste
- 1 whole egg
- 1 egg yolk
- 1 1/3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/3 cup white chocolate chips
- 1/3 cup peanut butter chips
- 1/3 cup milk chocolate chips
- 1/3 cup mini chocolate chips optional
Preheat oven to 350 degrees F and line 2 baking sheets with parchment paper.
In a large mixing bowl with an electric mixer or in the bowl of a stand mixer with a paddle attachment, cream the butter and sugars together until light, fluffy and smooth.
Add in egg, egg yolk, and vanilla paste or extract. Continue to beat until combined.
In a medium bowl, whisk together the flour and baking soda.
Add the flour mixture to the wet mixture and mix until cookie dough barley starts to form.
Add in all of the chocolate chips and continue mixing just until combined. Be sure not to over-mix.
Use a medium ice cream scoop to form cookie dough balls (equivalent to about 2 tablespoons). Place on prepared cookie sheet place 2 inches apart. *I like to top my cookie dough balls with a few chocolate chips for a prettier look.
Bake for 10-12 minutes and let cookies cool for a few minutes, then cool completely on a wire cooling rack. Enjoy!
