- 1 15 oz. can of black beans; drained and rinsed
- 1 11 oz. can of corn; drained and rinsed
- 1 green bell pepper; diced
- 1/2 cup cherry tomatoes; cut in quarters
- 1/2 cup cucumbers; diced with seeds removed
- 2 Tbsp. shallots; diced
- 1 tsp. garlic; chopped
- 3 Tbsp. olive oil
- 2 Tbsp. balsamic vinegar
- 1 Tbsp. fresh parsley; chopped
- 1 Tbsp. Sriracha
- Salt and pepper to taste
- Avocado to garnish; optional
- Chips to dip
Mix together all of the ingredients until combined. Add to a serving dish and serve with chips or use a topping for steak, chicken or pork.
Optional: place the dip in the refrigerator for 1 hour to over night to let the flavors soak in.
- Store any leftovers in an airtight container for up to 1 week in the refrigerator. Be sure to stir the salsa together before enjoying again to combine all of the flavors.
