Servings: 16 treats
- 6 tablespoons salted butter
- 8 cups mini marshmallows
- 1/2 teaspoon vanilla extract
- 6 cups rice krispies or crispy rice cereal
- 1 cup mini M&Ms candies divided
- 3/4 cup milk chocolate chocolate chips, almond bark, or candy melts
- 1 teaspoon coconut oil
Line a 9×9 inch pan with foil or parchment paper and grease with butter or nonstick cooking spray.
Bring a large pot or stock pot to low heat. Add butter and melt.
Reduce the heat to low heat and add mini marshmallows. Stir until melted, then add vanilla extract.
Remove the pot from heat and stir in the cereal until the marshmallow mixture completely coats the cereal. Stir in 1/2 cup of M&M candies and stir just until combined. Be sure not to stir too much otherwise the candies will melt.
Add the mixture to the prepared 9×9 inch pan and gently press the mixture into the pan. Make sure you don't press too hard otherwise your treats will be too dense and hard.
In a small microwave-safe bowl, heat chocolate chips and coconut oil. Heat in 30 second intervals until melted and smooth.
Pour the melted chocolate on top of the rice krispies and spread evenly with a spatula. Top with remaining M&M candies and let the treats rest for 30-60 minutes or until chocolate hardens. Cut into squares and enjoy!
