Graham Cracker Crust
- 1 1/2 cups graham cracker crumbs about 10 sheets
- 1 tablespooon brown sugar
- 2 tablespoons granulated sugar
- 6 tablespoons salted butter melted and cooled
Lemon Pie Filling
- 1 cup granulated sugar
- 2 tablespoons lemon zest
- 2 whole large eggs
- 2 egg yolks
- 3/4 cup lemon juice
- 1/2 cup all-purpose flour
To make the Graham Cracker Crust
Preheat oven to 350 degrees F. Add graham crackers to a food processor and grind until coarse. Add sugars and butter and grind again until combined and a sand like consistency.
Add crumbs to a 9x9 inch square pan coated with parchment paper and gently press down with your fingers or the back of a spice jar.
Lemon Bar Filling
In a large mixing bowl, whisk together the sugar and lemon zest. Add flour and mix again to combine.
Add in the eggs, egg yolks and lemon juice and mix until smooth.
Pour the filling on the graham cracker crust and baking for 29-30 minutes or until the center is set.
Let cool for at least an hour and then place in the refrigerator to set for at least another hour or until chilled. Dust with powdered sugar, slice into 16 bars and enjoy!
