- 1/2 cup salted butter softened at room temperature
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 whole egg
- 1 1/3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/3 cup cocoa unsweetened powder
- 1/4 cup Halloween sprinkles
Preheat oven to 350 degrees F and line a 8 × 8-inch or 9 × 9-inch pan with parchment paper or grease generously with cooking spray. In a large bowl, cream together the butter and sugars with an electric mixer for 4-5 minutes or until light and fluffy.
Add in vanilla extract and egg and mix again.
In a medium bowl, whisk together the flour, baking soda, baking powder, and cocoa powder.
Add the dry ingredients to the wet ingredients and mix until combined. Be sure to scrape down the sides of the bowl.
Press dough into prepared pan and top with sprinkles. Gently press the sprinkles down so it sticks into the dough. Bake for 20-25 minutes or until the center looks set. Let the cookie bars cool for 5 minutes and then lift bars out of the pan and transfer to a wire rack. Once cooled, cut into 16 bars with a sharp knife. Enjoy!
