Frankenstein Cupcakes

- 1 15 ounce box dark chocolate or Devils Food cake mix plus ingredients on package (water, eggs, and oil)
- 1 1/2 cup butter softened
- 5 cups powdered sugar
- 1 tablespoon milk as needed
- green food coloring
- 1 cup chocolate sprinkles
- 24 Tootsie Roll midgees (mini) cut in half
- 48 edible candy eyes
Prepare cupcakes according to box directions and allow to cool.
In a large bowl with an electric mixer or stand mixer, beat butter until fluffy. Add powdered sugar, one cup at a time until incorporated.
Add green food coloring until desired shade is achieved. If frosting gets too thick add a little milk.
Transfer frosting to a piping bag with a wide tip or place in a plastic ziplock and snip off a piece of the corner. Pipe a swirl onto each cupcake and flatten with a knife or offset spatula.
Place chocolate sprinkles in a shallow dish or plate. Gently press top of frosted cupcake into sprinkles to make hair.
Press two candy eyes in place. Place a Tootsie Roll half on the sides of each cupcake to make neck bolts. Add sprinkles for nose, mouth and eyebrows if desired. Enjoy!
