Edamame and Cucumber Salad

This Edamame and Cucumber Salad is crisp, refreshing, and full of protein-packed edamame, crunchy cucumbers, and a delicious homemade sesame ginger dressing. Made with simple ingredients and ready in only 15 minutes!

Ingredients

  • 6 mini Persian cucumbers or 2 English cucumbers thinly sliced
  • 1 cup edamame shelled
  • 1/4 cup green onions thinly sliced
  • 1 tablespoon toasted sesame seeds or furikake for garnish; optional

Sesame Ginger Sauce

  • 2 tablespoon olive oil
  • 3 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons tamari or soy sauce
  • 1 teaspoon ground ginger or fresh grated ginger
  • 1/2 teaspoon garlic powder
  • 1 teaspoon chili crunch oil optional
  • 1 teaspoon honey or maple syrup
  • 1/4 teaspoon salt

Instructions

  • Place the sliced cucumbers, edamame, green onions in a large bowl or serving bowl.
  • In a small bowl, whisk together the sesame ginger dressing ingredients.
  • Pour the dressing over the cucumber mixture and gently toss to coat and combine all of the ingredients. Place in the refrigerator to sit until ready to serve, the longer it sits- the more the flavors will absorb. 🙂 Top with sesame seeds or furikake and enjoy!
