Chopped Wedge Salad

Chopped Wedge Salad is just like a restaurant wedge salad except it's way easier to eat! Loaded with crunchy lettuce, juicy tomatoes, red onion, salty bacon pieces, and tangy blue cheese crumbles. Topped with a homemade creamy blue cheese dressing and perfect to serve with any meal.

Ingredients

Chopped Wedge Salad

  • 1 small head of iceberg lettuce chopped
  • 1 cup pearl or cherry tomatoes quartered
  • 8 ounces bacon cooked and chopped
  • 3/4 cup blue cheese crumbles
  • 1/4 cup red onion diced
  • 1-2 tablespoons green onions or chives optional for garnish

Blue Cheese Dressing

  • 1/2 cup blue cheese crumbles
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon red wine vinegar
  • 2 tablespoons mayonnaise
  • 2-3 tablespoons milk or buttermilk
  • 1/8 teaspoon granulated garlic
  • salt and pepper to taste

Instructions

  • Layer all of the salad ingredients in a large bowl or individual salad bowls starting with lettuce, tomatoes, red onions, bacon crumbles, and blue cheese.
  • To make the blue cheese dressing, combine all of the ingredients in a bowl except the milk and stir together. Slowly add in the milk until desired thickness. The more milk you add, the runnier the dressing will be.
  • Serve the dressing on the side and add as much or little as you want to the salad. Garnish with chives or green onions. Place in the refrigerator to chill or eat immediately. Enjoy!
