Buckeye Bars

- 1/2 cup unsalted butter softened
- 1 cup creamy peanut butter make sure to use creamy peanut butter such as Jif or Skippy brand that’s already stirred and has a little added sugar.
- 2 cups powdered sugar
- 1 teaspoon pure vanilla extract
- 1 cup chocolate chips semi-sweet, milk chocolate or dark chocolate will work
- 2 teaspoons coconut oil or butter
In a large mixing bowl with an electric mixer add the butter, peanut butter, powdered sugar, and vanilla extract. Mix until smooth.
Line a 9x9 inch baking dish with parchment paper or foil. Add the peanut butter mixture to the pan and firmly press the dough down with a rubber spatula into the pan.
In a microwavable bowl, add the chocolate chips and coconut oil and heat in 30 second increments until melted and smooth.
Pour the melted chocolate on top of the bars and spread evenly. Let sit at room temperature until the chocolate has set. Carefully pull the bars out of the pan by pulling up the parchment paper or foil. Cut into bars and place on a large plate or platter and cover with plastic wrap. Place in the refrigerator to chill for an hour then serve and enjoy.
