- 8 ounces mini mozzarella balls in oil cut in half or quarters
- 1/4 cup parmesan cheese shredded or grated
- 1/4 cup mozzarella cheese shredded
- 3/4 cup salami or pepperono shredded
- 2 tablespoons parsley finely chopped
- 1/4 cup black or kalamata olives
- 1/4 cup red onion diced
- 1/4 cup cucumber diced
Dressing
- 1/2 cup oil from mozzarella balls
- 2 tablespoons red wine vinegar
- 1 tablespoon balsamic vinegar
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon Italian seasoning
Bring a large pot of water to a boil and season with salt. Once the water starts to boil, add pasta and cook according to its boxed directions. Once pasta is cooked, drain and let cool in a large bowl.
In the meantime add all of the dressing ingredients to a bowl. Whisk together until well combined.
Once the pasta has cooled, add the remaining pasta salad ingredients. Stir and then add the salad dressing. Stir from the bottom to get all of the dressing incorporated into the pasta salad. Top with more toppings (optional). Let sit in the refrigerator until ready to serve. It's best when enjoyed cold but you can serve this right away as well. Enjoy!
