Healthy Chocolate Chip Cookie Dough Bites

These Healthy Chocolate Chip Cookie Dough Bites taste just like cookie dough! These bites are protein packed and make a nutritious snack!

Ingredients

  • 2 cups oat flour
  • 1/3 cup vanilla protein powder
  • 1/2 cup smooth peanut butter; slightly melted and cooled you could use any nut butter
  • 1 1/2 tsp. vanilla extract
  • 1/2 cup milk
  • 1/4 cup mini chocolate chips

Instructions

  • In a large bowl, whisk together the oat flour and protein flour. Using a spatula or wooden spoon mix in the peanut butter, vanilla extract, milk and mini chocoalte chips until a dough is formed. If the dough becomes dry, add a splash of milk.
  • To form the balls, use a mini ice cream scoop or 2 tablespoons. Form a ball and place on a plate or an airtight container lined with parchment paper. You can add more chocolate chips to the tops of these dough balls if you want to add more chocoalte. Place in the refrigerator until ready to eat. They will last for a week.

Notes

  1. You can make your cookie dough bites as small or large as you want. Please note your yield will change depending on how small or large they are. You will yield about 20 for a standard larger size (made with a mini ice cream scoop), 30 for a medium size, and 40 for a smaller size. 
  2. These can be customized to your preference. They can also be vegan and gluten-free. Simply use gluten-free oats, vegan chocolate and vegan protein powder.
