Lucky Charms Cookies

Lucky Charms Cookies are fun, easy to whip up, and everyone will love this treat! Frosted Sugar Cookies are topped with Lucky Charms cereal and marshmallows, making these extra special and delicious.

Ingredients

Sugar Cookies

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon fine sea salt
  • 1/2 cup unsalted butter; softened
  • 1/2 cup granulated sugar
  • 1 whole egg
  • 1 teaspoon vanilla extract
  • 2-3 cups Lucky Charms cereal

Green Frosting

  • 2 cups powdered sugar
  • 1/4 cup unsalted butter; softened
  • 2 tablespoons whole or reduced-fat milk
  • 1/4 teaspoon vanilla extract
  • 2-4 drops green food gel

Instructions

How to make the cookies

  • Preheat oven to 350 degrees F. Lines 2 cookie sheets with a silpat mat or parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. 
  • In a large bowl with an electric mixer, cream together the butter and sugar until fluffy- about 1 minute. Add the egg and vanilla extract and beat until combined. 
  • Slowly add the flour mixture and mix. Be sure to scrape down the sides of the bowl. Once a cookie dough is formed, use a small ice cream scoop and form the cookie dough balls.
  • Place cookies on the cookie sheet about 2 inches apart. Bake for 9-11 minutes until the cookies have lightly spread. Let the cookies cool for 5 minutes before transferring them to a cooling rack.

How to make the frosting

  • In a medium bowl, beat together the butter, vanilla extract, and milk until combined.
  • Add in the powdered sugar and beat until combined and the frosting is smooth. If it seems too thick, add more milk. If it seems too watery, add more powdered sugar.
  • Add green gel and beat until the color is evenly mixed in.
  • Frost each cookie and top with a handful of Lucky Charms cereal. I recommend crushing a few pieces of the cereal to add to the top too for more texture. Enjoy!

Notes

Recipe Notes: 
  • Store leftover cookies in a cool area in an airtight container for up to 5-6 days. You can also store cookies in the refrigerator for 2-3 days. 
  • I don't recommend freezing frosted cookies, but you can freeze plain sugar cookies that have been baked and cooled. Store in a heavy-duty ziplock bag or airtight container. To thaw, let the cookies sit out for at least 20 minutes before frosting.
  • If you're in a pinch and want to take a few shortcuts, use storebought sugar cookies and canned frosting.
  • Switch out the cereals for different flavors. Other cereals to add are Fruit Loops, Captn Crunch, Fruity Pebbles, Cinnamon Toast Crunch, Cookie Crisp, Cocoa Puffs, and Honey Nut Cheerios.
