Banana Baked Oatmeal

Healthy Banana Baked Oatmeal tastes like dessert and is easy to make. Packed with oats, bananas, cinnamon, and naturally sweetened with honey and maple syrup. This nutrient-packed breakfast is fluffy, quick to make, and has all the same flavors of banana bread!

Ingredients

  • 2 ripe bananas
  • 2 whole eggs
  • 1/4 cup pure maple syrup
  • 2 tablespoons coconut oil melted
  • 2 tablespoons honey melted
  • 2 cups milk or almond milk
  • 2 1/4 cups old-fashioned oatmeal
  • 1 1/2 teaspoons baking powder
  • 1/8 teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • 1/3 cup walnuts chopped, optional

Instructions

  • Preheat oven to 350 degrees F and grease a 9x9 inch baking dish generously with nonstick spray.
  • In a large bowl, mash together the bananas with a fork. Add the eggs, maple syrup, coconut oil, and honey. Whisk until combined.
  • Add the milk and whisk again until incorporated with the liquid mixture.
  • Add the oats, baking powder, salt, cinnamon, and walnuts. Stir until all of the ingredients are combined.
  • Pour the oat mixture into the prepared baking dish and top with sliced bananas and walnuts (optional). Bake for 35-40 minutes, or until golden brown on top or a toothpick comes out clean. Serve either warm, cold, or refrigerate to enjoy throughout the week.

Notes

Recipe Notes:
Store leftovers in an airtight container for up to 5 days. When ready to reheat, place in the microwave and heat for 15-45 seconds depending on your microwave. 
To freeze, make sure the oatmeal is completely cool, then cut into 9 squares and wrap each into plastic wrap or foil, then place into a large ziplock bag. When you're ready to eat it, thaw overnight then microwave for 30 seconds- 1 minute. You can also defrost the oatmeal in the microwave for a few minutes until thawed and warmed. 
Other recipe variations:
Peanut Butter Baked Oatmeal: Add a few tablespoons of peanut butter or any nut butter to the oatmeal mixture. You can also swirl the peanut butter on top. 
Berry Baked Oatmeal: add fresh or frozen berries to the oatmeal mixture and on top. 
Chocolate Chip Baked Oatmeal: chocolate and oats pair so well together. Add a handful of either dark or milk chocolate chips.
Birthday Baked Oatmeal: add sprinkles to the top of the oats if you are wanting to make this for a fun occasion or birthday.
