Brownie Mix Cookies

These super easy Brownie Mix Cookies are soft, chewy, and made with only 6 ingredients! These cookies taste exactly like a fudgy brownie, in a cookie form!

Ingredients

  • 1 box brownie mix; fudge any brand
  • 1/4 cup canola oil
  • 2 whole large eggs
  • 1/4 cup flour
  • 3/4 cup chocolate chips; optional
  • sprinkles; optional

Instructions

  • Preheat oven to 350 degrees F. Line two baking sheets with parchment paper or silpat mats.
  • In a large bowl, mix together the brownie mix, oil, eggs, chocolate chips, and flour. Mix until combined.
  • Use a mini cookie scoop (or 2 tablespoons of dough) and place on prepared baking sheet, about 2 inches apart. Top with sprinkles and bake for 10 minutes. The cookies will seem underbaked and that's perfectly OK. This is how they will get super fudgy.
  • Let the cookies cool to set for a few minutes before transferring them to a cooling rack. Enjoy!

Notes

Leftovers
  • Store any leftovers in an airtight container or ziplock container for up to 5 days in a cool area. 
  • Freeze any leftover cookies in a freezer-safe bag or airtight container for up to 3 months. Let thaw in the refrigerator or counter.
