Ingredients

  • 1 banana (the riper, the better)
  • 1/2 cup oats
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 cup milk
  • 1/4 teaspoon cinnamon
  • 1 whole egg
  • 1/4 teaspoon vanilla extract

Instructions

  • Place all of the ingredients in a blender or food processor and blend until smooth.
  • Heat a waffle iron and grease with nonstick cooking spray, melted coconut oil, or melted butter.
  • Add 1/4 cup of waffle batter and cook accordingly to waffle maker instructions. The waffles should be a light golden brown color and shouldn't take more than a few minutes to cook. Let cool for a few minutes and enjoy! Top with your favorite toppings, peanut butter, mixed berries, or enjoy them just as they are.

Notes

Recipe Notes:
  • I made these waffles in my mini waffle iron but you can use a regular waffle iron instead.
  • To-store: make sure the waffles are completely cooled then place them in an airtight container or large ziplock bag. Store for up to 2-3 days. To warm, place waffles in the toaster to reheat and get crispy.
  • To freeze and make-ahead: I always recommend making a batch and freezing them so you always have waffles ready to go. After you make a batch of waffles, let them cool completely then wrap each individually with plastic wrap. Place wrapped waffles in an airtight container or large ziplock bag. They will last up to 3 months.
  • To Reheat: Reheat by placing the frozen waffles in the toaster to defrost and heat until warm and crispy. It's that easy!
  • Add 2-4 tablespoons of honey or pure maple syrup if you want to add more sweetness since theres zero refined sugar.
