Gingerbread Baked French Toast

Ingredients

  • 10 slices white bread
  • 3/4 cup milk
  • 3 whole large eggs
  • 1/3 cup molasses
  • 1/2 cup maple syrup; divided
  • 1 tsp. vanilla extract
  • 1 tsp. ground cinnamon
  • 3 Tbsp. sugar
  • 1 tsp. ground ginger
  • 1/4 tsp. ground cloves
  • 1/2 tsp. ground nutmeg
  • 1/4 cup butter; melted

Instructions

  • Preheat oven to 350 degrees F. Grease a 9" x 13" baking dish with non-stick cooking spray or butter.
  • In a medium bowl, whisk together the milk, eggs, molasses, 1/4 cup of syrup, cinnamon, ginger, cloves, nutmeg, melted butter, sugar, and vanilla extract. Whisk until ingredients are combined.
  • Poke each bread slice a few times with a fork and place on the greased baking dish. I place 5 slices on the bottom layer and pour half of the gingerbread mixture on top. Cut 2 slices of bread in half so it will fit the baking dish. Use a spatula to spread the mixture evenly on top. Place the other slices of bread on top and then spread with the remaining gingerbread mixture on top.
  • Cover the French toast with foil and bake for 20 minutes. Remove the French toast from the oven, remove the foil and drizzle the remaining 1/4 cup of maple syrup on top. Place the French toast back in the oven and bake for another 10 minutes.
  • Let cool for a few minutes before serving. Sprinkle powdered sugar on top and enjoy!

Notes

How to prep the night before:

Simply follow the recipe instructions step one through three. Cover the baking dish and place in the refrigerator until ready to bake. When ready to bake, follow the recipe instructions. 

Leftovers:

Store any leftover French toast in an airtight container in the refrigerator for up to 4-5 days. To reheat, place Frech toast in the microwave for a few minutes or bake in the oven at 350 degrees until warm.
