Cinnamon Banana Bread

Ingredients

Cinnamon Sugar Crust

  • 1 Tablespoon butter; melted
  • 2 Tablespoons sugar
  • 1/4 teaspoon ground cinnamon

Cinnamon Banana Bread

  • 3 medium bananas; ripened
  • 2 whole eggs
  • 6 Tablespoons butter; melted
  • 1 1/2 teaspoon vanilla extract
  • 1/4 cup honey; melted
  • 3/4 cup sugar
  • 3 Tablespoons brown sugar
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons ground cinnamon

Instructions

  • Preheat oven to 325 degrees F. To make the cinnamon-sugar crust, combine the cinnamon and sugar in a small bowl. Coat a loaf pan with melted butter- I use a brush to coat the pan. Sprinkle the cinnamon sugar mixture to coat the bottom and all sides of the pan. Gently shake the pan to get an even coat.
  • In a large bowl, mash the bananas together with a fork until smooth (it's ok if there are a few lumps). With wooden spoon, stir in the eggs, melted butter, vanilla extract and honey. Mix until combined.
  • Add the sugars and continue to stir.
  • Add the remaining dry ingredients (flour, baking soda, salt and cinnamon). Mix together completely combined. Pour the batter into the prepared pan and bake for 55 minutes to 1 hour or until the center is set. Let cool, slice and enjoy!

Notes

  • Serve this moist banana bread recipe with whipped cream cheese, jam, a simple icing, etc. 
  • Be sure to use ripened bananas for the sweetest flavors of banana in this bread. 
  • If the bread is browning too quickly, then top it with aluminum foil while it finishes baking. 
  • Store leftovers in an airtight container or wrap the bread in plastic wrap and store it at room temperature for about four days.
  • To freeze this bread, slice the cooled banana bread into individual slices and place the slices in a freezer-safe bag and freeze for up to four months. Allow the frozen bread slices to thaw in the refrigerator overnight before eating.
