Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 tsp. baking powder
  • 1/8 tsp. salt a pinch
  • 1/8 tsp. ground cinnamon
  • 2 cups buttermilk
  • 2 large whole eggs
  • 1/4 cup butter; melted
  • 2 tsp. vanilla extract

Instructions

  • In a large mixing bow, mix together the dry ingredients (flour, sugar, baking powder, salt and cinnamon). Set aside.
  • In a medium bowl, whisk together the dry ingredients (buttermilk, eggs, melted butter and vanilla extract).
  • Gently add the wet ingredients to the dry ingredients and whisk to combine. Be sure not to overmix! The batter may be a bit lumpy.
  • Preheat waffle iron and spray with non-stick cooking spray. Pour about 1/3-1/2 cup of the batter into the waffle iron (or until the batter covers the waffle iron). Cook until ready, about 2-3 minutes, or until the waffle indicates they are ready.
  • Serve immediately, or place the cooked waffles in a 300 degree oven to keep warm until ready to serve.

Notes

  1. Storing leftovers: wrap each waffle in plastic wrap and place in a ziplock bag. Store in the refrigerator for up to 3 days, or freeze for up to 3 months. To thaw, simply place the waffle in a toaster or warm in a a 300 degree oven for a few minutes.
  2. To make homemade buttermilk, add 1 tablespoon of lemon juice or white vinegar to 1 cup of milk in a liquid measuring cup. Stir and let sit for 10 minutes. Do this for every cup of buttermilk that you need.
  3. To ensure waffles are crispy, place cooked waffles in a 300 degree oven for a few minutes or let the waffles cook on the waffle iron for a minute or two longer.
