Chewy Ginger Molasses Cookies

Ingredients

  • 3/4 cup butter; unsalted
  • 1 cup brown sugar; room temperature
  • 1/4 cup molasses
  • 1 whole egg
  • 2 tsp. vanilla extract
  • 2 1/4 cup all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 2 tsp. ground ginger
  • 1/4 tsp. salt

Cinnamon Sugar to roll cookies

  • 3 Tbsp. granulated or coarse sugar
  • 1/2 tsp. ground cinnamon

Instructions

  • Preheat oven to 350 degrees F and line 2 baking sheets with parchment paper or silpat mats. Set aside.
  • In a large mixing bowl, beat butter and brown sugar with an electric mixer on medium-speed until light and fluffy. Be sure to scrape down the sides of the bowl.
  • Add in molasses, egg and vanilla extract and beat on low-speed until combined.
  • In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger and salt to combine. Gradually add the flour mixture to the wet mixture until a cookie dough starts to form. Occasional scrape down the sides of the bowl.
  • Place the sugar and cinnamon in a shallow bowl and mix together with a spoon. Scoop the cookie dough with a mini ice cream scoop or 2 tablespoons of dough and roll to form a ball. Roll each dough ball in the cinnamon sugar mixture and place on the prepared baking sheets leaving about 2 inches apart. Lightly press down on each cookie to flatten.
  • Bake for 9-10 minutes or until they turn light golden brown. Remove from the oven and let cool for a few minutes before transfering to a coolign rack. Enjoy!
