Baked Chicken & Cheese Flautas + GIVEAWAY

They baked flautas are perfect for any occasion, especially during the Superbowl. These will be sure to please everyone!
Servings: 8

Ingredients

  • 8 flour soft tortillas
  • 2 cups of shredded chicken*
  • 1/2 cup of shredded Mexican style cheese
  • 1/2 cup of Lantana Black Bean Hummus
  • Toppings of your choice:
  • 1/2 cup of pico de gallo
  • Guacamole
  • Sour Cream
  • Shredded lettuce
  • Salsa
  • Hot sauce

Instructions

  • Preheat oven to 350 degrees F. Line a baking sheet with foil and place tortillas on sheet. It is OK if they overlap eachother.
  • Next step is assembling! Spread about 2 tablespoons of hummus on each tortilla. I just spread it evenly down the middle. Then add about 1/4 cup of shredded on each tortilla, then sprinkle them all with shredded cheese (you can never add too much cheese!). Roll each one up and bake for about 10-15 minutes until melted.
  • Top with more cheese and your favorite toppings such as sour cream, guacamole, pico de gallo, and lettuce.

Notes

*To make the shredded chicken, grill 6 chicken tenders and brush them with olive oil and salt and pepper. Cook for about 5 minutes until chicken is completely cooked. Shred with a fork and refrigerate until ready to use.
