Sausage Pancake Muffins

These protein-packed Sausage Pancake Muffins makes a quick breakfast that the whole family will love! Made with only 4 simple ingredients and is so easy to whip up! They can be made ahead of time for meal prepping and freeze well.

Ingredients

  • 2 cups pancake mix I used Kodiak Cakes pancake mix
  • 12 precooked breakfast sausage links cut into pieces
  • 1 1/2 cups water
  • 2 tablespoons pure maple syup

Instructions

  • Preheat oven to 350 degrees F and line a muffin pan with silicone liners or coat well with cooking spray.
  • In a large mixing bowl, combine pancake mix, water, maple syrup, and half of the sausage pieces. Mix just until combined- do not over-mix otherwise muffins won't be fluffy.
  • Pour batter evenly into 12 muffin spaces and top with remaining sausage pieces.
  • Bake for 20 minutes or until the middles are completely cooked through. Serve with warm maple syrup (optional) and enjoy!
