Peeps Rice Krispie Treats

These quick and adorable Easter Peeps Rice Krispie Treats makes a perfect Easter dessert! A gooey marshmallow cereal mixture is topped with white chocolate, sprinkles and cute little marshmallow Peeps. They are a great way to get the kids involved in the kitchen since they are so easy to make!

Ingredients

  • 6 tablespoons butter
  • 1 16 ounce bag mini marshmallows
  • 1/2 teaspoon vanilla extract
  • 7 cups crispy rice cereal
  • 3/4 cup white candy melts or white chocolate divided
  • 16 marshmallow Peeps bunnies
  • sprinkles

Instructions

  • Line a 13x9 inch pan with foil or parchment paper and grease with butter or nonstick cooking spray.
  • Bring a large pot or stock pot to medium heat and add butter and melt. Reduce the heat to low heat and add mini marshmallows. Stir until melted, then add vanilla extract.
  • Remove the pot from heat and stir in the cereal until the marshmallow mixture completely coats the cereal.
  • Add the mixture to the prepared pan and gently press the mixture into the pan. Make sure you don't press too hard otherwise your treats will be too dense and hard.
  • Melt 1/2 cup of white chocolate and add to a ziplock bag and cut a small piece of the corner off. Drizzle white chocolate all over the rice krispie treats and add sprinkles. Let treats cool so chocolate hardens for about 20 minutes or place in the refrigerator for 10 minutes.
  • With a sharp knife, cut treats into 16 rectangles. This will help the placement of the Peeps. Melt the remaining white chocolate and dab enough on the back of each marshmallow bunny Peep. Gently press Peep on each rectangle and repeat until you've decorated them all. Let them harden for a few minutes and enjoy!
