Easter Peeps Cake

- 1 box Funfetti or white cake mix plus the ingredients on the box
- 1 1/2 cups shredded coconut
- green food coloring gel
- about 26 Peeps marshmallow chicks
- 3-4 Peeps marshmallow chicks
Bake cake according to box directions, using two greased 8×8 inch or 9×9 inch cake rounds. Let the cakes cool for a few minutes before transferring to a cooling rack to cool completely.
Line a cake platter or serving dish with parchment paper and and place one of the cake rounds in the center. Frost bottom layer of the cake with frosting and then place the second layer on top. Cover with frosting.
Add Peeps around the cake and make sure the backs stick to the frosting.
To make the green grass, place the shredded coconut in a large ziplock bag and add a few drops of green food coloring. Shake the bag until the coconut is green. Sprinkle on top of cake, leaving some room around the edges.
Add chocolate Easter eggs and Peeps chicks on top. Carefully remove the parchment paper from the bottom of the cake and enjoy!
