Ingredients

  • 1/2 tablespoon olive oil
  • 1 medium yellow onion diced
  • 1 clove garlic minced
  • 1 red bell pepper chopped
  • 1 pound ground turkey
  • 2 cups your favorite enchiladas sauce plus 2 tablespoons; divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 cup sour cream
  • 1 1/4 cup shredded sharp cheddar cheese divided
  • 1 1/4 cup shredded Jack cheese divided
  • 8 large flour tortillas

Instructions

  • Preheat oven to 350 degrees F. In a large frying pan heat oil and sauté onion, garlic, and peppers for 3-5 minutes, or until peppers are softened.
  • Add ground turkey meat, 2 tablespoons of enchilada sauce, and seasonings. Cook until ground turkey is completely cooked through and no longer pink, about 7-10 minutes.
  • In a medium bowl, whisk together enchilada sauce and sour cream. Ladle 1 cup of enchilada sauce onto the bottom of a 9x13 inch baking dish.
  • In a small mixing bowl combine the shredded cheeses.
  • Add 1/2 cup of cooked turkey meat in the middle of each tortilla and top with 1/4 cup of cheese. Roll the tortilla and place on baking dish covered in enchilada sauce. Repeat until you've made 8 enchiladas.
  • Top with remaining enchilada sauce and cheese. Cover with foil and bake for 15 minutes, then remove the foil and bake for 5 more minutes until cheese is bubbly. Top with your favorite toppings such as sliced avocados, fresh cilantro, sour cream, and pico de gallo. Enjoy!
