Red Velvet Cake Mix Cookies

Red Velvet Cake Mix Cookies make the cutest cookies and take minimal effort to make. Made with only 5 ingredients and are perfectly chewy with a soft texture. Rolled in sprinkles and topped with a chocolate heart for fun Valentine's Day treat!

Ingredients

  • 1 box Red Velvet Cake Mix
  • 1/3 cup vegetable oil or canola oil
  • 2 whole large eggs
  • sprinkles optional
  • 18 heart shaped chocolates

Instructions

  • In a large bowl, mix together cake mix, eggs, and oil until combined. You can do this by hand, with an electric hand mixer, or stand mixer. Please note the dough will be sticky and thats OK!
  • Cover bowl with plastic wrap and refrigerate dough for 15-20 minutes.
  • Preheat oven to 350 degrees F and line baking sheets with parchment paper. Place sprinkles in a shallow bowl or dish. Scoop cookies with mini ice-cream scooper and roll in sprinkles and place on baking sheet 1 inch apart. Bake for 10 minutes (they may look under-cooked).
  • Remove cookies from oven and place a chocolate heart in the center on top of each cookie immediately. You don't have to press down too much as the chocolate will slightly melt onto the cookies.
  • Let the cookies cool for a few minutes and then transfer to a cooling rack. Enjoy!
