Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1/4 cup unsweetened cocoa powder
  • 1 1/4 cups milk I used unsweetened almond milk
  • 1/2 cup medium banana about 1 medium sized banana
  • 2 whole eggs
  • 1/4 cup pure maple syrup
  • 1 cup milk chocolate chips plus more to sprinkle on top
  • 2 tablespoons coconut sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 350 degrees F and spray a 9 x 13 inch baking pan with nonstick cooking spray. Add 1 1/2 cups of oats in a food processor and blend until the oats turn into fine pieces- it will look like sand. This is an optional step but it helps make the oatmeal resemble a brownie.
  • Add all of the oats, baking powder, and cocoa powder to a large bowl and whisk together.
  • In a medium bowl, whisk together the almond milk, banana mash, eggs, syrup, sugar, and vanilla extract.
  • Add the wet ingredients to the dry oat mixture and stir together until combined then add in the chocolate chips.
  • Let the oatmeal batter sit to absorb all of the ingredients for 10 minutes.
  • Spread the batter evenly into the greased baking pan, then sprinkle the top with more chocolate chips. Bake for 20-25 minutes or until the center is set.
