Cake Mix Christmas Cookies

Cake Mix Christmas Cookies makes a fun and easy dessert for the holiday season! Made with cake mix, lots of festive sprinkles then dipped in melted chocolate.

Ingredients

  • 1 box white or vanilla cake mix
  • 2 whole eggs
  • 1/2 cup canola or vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 cup festive sprinkles plus more to add to chocolate
  • 1/2 cup chocolate chips
  • 2 teaspoons coconut oil or butter

Instructions

  • In a large bowl, mix together cake mix, eggs, oil, vanilla extract, and baking powder until combined. You can do this by hand, with an electric hand mixer, or stand mixer. Fold in sprinkles until combined.
  • Cover bowl with plastic wrap and refrigerate dough for 20 minutes.
  • Preheat oven to 350 degrees F and line 2 baking sheets with parchment paper or silpat mats.
  • With a mini ice-cream scooper, scoop the cookie dough onto prepared cookie sheets 1 inch apart. Bake for 10-12 minutes (they may look under-cooked). Place on cooling rack and let cool for 10 minutes.
  • In the meantime, place the chocolate chips and coconut oil in a microwave safe bowl and heat in 30 second intervals until chocolate is melted. Once the cookies are cooled, dip half the the cookies in chocolate and place on cooling wrap. Top with more sprinkles and let chocolate harden. Enjoy!
