Apple Cinnamon Bundt Cake

Ingredients

  • 1 box yellow cake mix
  • 1/2 cup salted butter melted and cooled
  • 3 whole eggs
  • 1/4 cup applesauce
  • 3/4 cup reduced fat or whole milk
  • 2 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • 1 tablespoon brown sugar
  • 1 1/2 cups chopped or shredded apples about 2 large apples (ok to leave skin on)

Cinnamon Sugar Coating

  • 2 tablespoons salted butter melted
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

Cinnamon Glaze

  • 1 cup powdered sugar
  • 3-4 tablespoons milk
  • 1/4 teaspoon ground cinnamon

Instructions

  • Preheat oven to 350 degrees F and generously grease a bundt pan. You could also coat the pan with a cinnamon sugar mixer. In a large mixing bowl, beat together all of the cake ingredients except for the apples with an electric mixer until smooth and combined. Be sure to scrape down the sides of the bowl with a rubber spatula
  • Gently fold in the apples and mix until combined. Spoon the cake batter into the prepared bundt pan.
  • Bake cake for 40-45 minutes or until the tops are light golden brown and the sides pull away from the pan. You can also insert a toothpick into the center and make sure it comes out clean.
  • Once the cake is baked, let cool for 10-15 minutes before turning it over onto a cooling rack. Make sure to lightly pat all of the sides of the pan so it can release immediately. If the cake doesn't release right away, let it cool for another 5 minutes and shake or pat the sides more.

Cake Toppings

  • In a small bowl, add the sugar and cinnamon and mix until combined.
  • With a pastry brush, brush the cake all around with melted butter. Immediately add the cinnamon sugar coating so it sticks. Use your hands if needed to help the coating stick.
  • In another small bowl, combined all of the icing ingredients until smooth. Drizzle all over the cake. Slice and enjoy!
