- 2 ripe bananas
- 1/2 cup plain or vanilla flavored yogurt regular or Greek
- 1/3 cup honey or maple syrup
- 2 whole eggs
- 1 1/2 teaspoons vanilla extract
- 1/4 cup coconut oil or butter melted
- 1/2 cup oat flour
- 3/4 cup whole wheat flour
- 1/4 cup vanilla protein powder
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 cup mini chocolate chips plus more to put on top
Preheat oven to 350 degrees F. Line a loaf pan with parchment paper or generously coat with nonstick spray or brush with melted butter.
In a large bowl, mash the bananas together with a fork until smooth (it's ok if there are a few lumps). With wooden spoon, stir in the yogurt, honey, eggs, vanilla extract, and melted butter or coconut oil. Mix until combined.
In a medium bowl, whisk together the oat flour, whole wheat flour, protein powder, cinnamon, baking powder, and baking soda. Mix together completely combined.
Fold the dry ingredients into the banana mixture just until combined and add chocolate chips.
Pour the batter into the prepared pan and top with more chocolate chips optional and bake for 45-50 minutes. Let cool, slice and enjoy!
