Peanut Butter Cookie Bars

Peanut Butter Cookie Bars are super easy and tastes like peanut butter cookies only in a bar form. Loaded with peanut butter, Reese's peanut butter cups, and peanut butter chips. This is the ultimate dessert for peanut butter lovers!

Ingredients

  • 6 tablespoons unsalted butter melted and cooled
  • 1/2 cup creamy peanut butter
  • 1/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 1/4 teaspoon vanilla extract
  • 1 whole egg
  • 1 1/2 cups all-purpose flour
  • 1/4 cup old-fashioned oats
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup peanut butter chips plus more to add to top
  • 1 cup mini Reese's peanut butter cups; cut in half or quarters divided

Instructions

  • Preheat oven to 350 degrees F and line a 8x8 inch or 9x9 inch baking pan with parchment paper or grease generously with cooking spray. In a large bowl, whisk together the melted butter and peanut butter until combined. Add the sugars, vanilla extract, and egg and mix.
  • In a medium bowl, whisk together the flour, oats, baking soda, and baking powder.
  • Add the dry ingredients to the peanut butter mixture and beat together with an electric mixer or a wooden spoon.
  • Add in 3/4 cup of mini Reese's peanut butter cups and peanut butter chips until combined.
  • Add the cookie dough batter to the prepared baking sheet and top with remaining peanut butter cups and peanut butter chips. Bake for 20-25 minutes or until the top is a light golden brown. Let the cookie bars cool for 5 minutes and then lift bars out of the pan and transfer to a wire rack. Once cooled, cut into 16 bars with a sharp knife. Enjoy!
