Fruit Pizza Cookies

To Make The Cookie
- 3/4 cup butter softened
- 3/4 cup granulated sugar
- 2 whole eggs
- 1 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- 2 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 2 tablespoons vanilla pudding powder
To Make The Cream Cheese Filling
- 1/4 cup cream cheese softened
- 1/4 cup unsalted butter softened
- 1/4 cup vanilla pudding powder
- 1/4 cup milk to thin
- 1/4 cup powdered sugar
- fresh fruit I use blueberries, raspberries, strawberries, kiwi, clementines
To Make The Cookies
In a large mixing bowl beat butter and sugar together with a hand held electric mixer or stand mixer until light and fluffy, about 2-3 minutes.
Add in eggs and extracts and continue to mix together until smooth. Be sure to scrape down the sides of the bowl often.
Add in flour, baking powder, and pudding mix. Continue to beat together just until the cookie dough forms (the dough might be crumbly and thats ok, if you squeeze it together with your hands it will stick together). Cover with plastic wrap and let the cookie dough sit in the refrigerator for 10 minutes.
In the meantime, preheat oven to 350 degrees and grease two cookie sheets with nonstick spray or parchment paper.
Scoop 3 tablespoons of cookie dough (the size of a large cookie scoop). Roll the dough into a ball and place on cookie sheet. Gently press the bottom of a spice jar on top to spread making a slight indent in the cookies.
Bake for 9-11 minutes or just until a light golden brown. Remove from the oven and let cool for a few minutes before transferring the cookies to a cooling rack.
Recipe Notes:
- To Store: Place cookies in an airtight container and be sure to add a layer of wax paper in between the layers. They will last in the fridge for up to 3 days. Please note that depending on the fruit you use, the fruit may turn brown.
