Cilantro Lime Shrimp

Ingredients

  • 1 pound raw medium shrimp; cleaned and devined
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground cayenne pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup cilantro roughly chopped
  • 1 lime juiced
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon olive oil

Instructions

  • Preheat oven to 400 degrees F. Place a cooling rack on a baking sheet and spray with nonstick cooking spray.
  • In a medium-sized bowl, add the shrimp and drizzle with olive oil and mix until lightly coated.
  • Add cumin, cayenne, garlic powder, salt, and pepper. Mix until shrimp is coated.
  • Lay coated shrimp on prepared rack. Make sure they are not touching. Bake for 8 to 10 minutes- be sure not to overcook.
  • Let the shrimp cool for a few minutes and place in a serving tray or bowl. Coat with lime juice and fresh cilantro. Stir and serve immediately, or cover and refrigerate.
