- 1 pound raw medium shrimp; cleaned and devined
- 1 teaspoon ground cumin
- 1/4 teaspoon ground cayenne pepper
- 1/4 teaspoon garlic powder
- 1/4 cup cilantro roughly chopped
- 1 lime juiced
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon olive oil
Preheat oven to 400 degrees F. Place a cooling rack on a baking sheet and spray with nonstick cooking spray.
In a medium-sized bowl, add the shrimp and drizzle with olive oil and mix until lightly coated.
Add cumin, cayenne, garlic powder, salt, and pepper. Mix until shrimp is coated.
Lay coated shrimp on prepared rack. Make sure they are not touching. Bake for 8 to 10 minutes- be sure not to overcook.
Let the shrimp cool for a few minutes and place in a serving tray or bowl. Coat with lime juice and fresh cilantro. Stir and serve immediately, or cover and refrigerate.
