Vanilla Nut Granola is sweet, crunchy, healthy and refined sugar free! This granola can be eaten as a snack, cereal or top on your favorite yogurt!

- 2 cups old-fashioned rolled oats
- 2 cups mixed nuts
- 1/4 cup honey; melted
- 2 Tbsp. maple syrup
- 1 1/2 Tbsp. vanilla extract
- 1/4 cup coconut oil; melted
- 1/4 cup quinoa
Preheat oven to 300 degrees F and line a baking sheet with parchment paper or a silcone mat. Toss the oats and mixed nuts in a large bowl together and set aside.
In a small bowl, whisk together the honey, syrup, vanilla extract and coconut oil. Pour the mixture over the oats and mix to evenly coat and until the oats are moistened.
Spread the granola on the prepared baking sheet and sprinkle the quinoa on top. Bake for 35-40 minutes, flipping half way through cooking. Let the granola cool completely- this will make the granola extra crunchy! Enjoy!
- This granola can stay fresh for an extra long time- up to 3 weeks when stored in an airtight container in a cooled area.
