Vanilla Nut Granola

Vanilla Nut Granola is sweet, crunchy, healthy and refined sugar free! This granola can be eaten as a snack, cereal or top on your favorite yogurt!

Ingredients

  • 2 cups old-fashioned rolled oats
  • 2 cups mixed nuts
  • 1/4 cup honey; melted
  • 2 Tbsp. maple syrup
  • 1 1/2 Tbsp. vanilla extract
  • 1/4 cup coconut oil; melted
  • 1/4 cup quinoa

Instructions

  • Preheat oven to 300 degrees F and line a baking sheet with parchment paper or a silcone mat. Toss the oats and mixed nuts in a large bowl together and set aside.
  • In a small bowl, whisk together the honey, syrup, vanilla extract and coconut oil. Pour the mixture over the oats and mix to evenly coat and until the oats are moistened.
  • Spread the granola on the prepared baking sheet and sprinkle the quinoa on top. Bake for 35-40 minutes, flipping half way through cooking. Let the granola cool completely- this will make the granola extra crunchy! Enjoy!

Notes

  1. This granola can stay fresh for an extra long time- up to 3 weeks when stored in an airtight container in a cooled area.
