Healthy Homemade Thin Mint Cookies

Ingredients

  • 1 cup almond flour
  • 3 Tbsp. cocoa powder
  • 2 Tbsp. maple syrup
  • 2 Tbsp. coconut oil; melted
  • 1/2 tsp. peppermint extract

Chocolate coating

  • 1 cup dark chocolate chips
  • 2 tsp. coconut oil
  • 1/4 tsp. peppermint extract

Instructions

  • Combine almond flour, cocoa powder, maple syrup, coconut oil, and peppermint extract in a bowl until a dough is formed. The cookie dough may seem a little crumbly and that is totally OK. Place the dough in the refrigerator for 15 minutes to chill.
  • Preheat the oven to 350 degrees F and line a baking sheet with parchment paper or a silpat mat. Place the cookie dough in between two pieces of parchment paper and roll out the dough until it's about 1/4 inch thick. Using a small circular cookie cutter, cut out the cookies and place on the cookie sheet. Bake for 13-14 minutes. Once the cookies are baked, let them cool completely.
  • Once the cookies are completely cool melt the chocolate and coconut oil in a microwavable safe bowl for 1-2 minutes depending on your microwave. Stir every 30 seconds. Once the chocolate is melted and smooth, stir in the peppermint extract.
  • Use a fork to dip the cookies in the melted chocolate. Scrape off any excess chocolate off on the side of the bowl and place the cookie back on the cookie sheet. Once all of the cookies are coated in chocolate, place in the freezer for about 30 minutes to let the chocolate set. You can eat these straight from the freezer and don't need to thaw. Enjoy!
