This Shrimp Fried Rice is always a hit at my house! It’s so easy to make from scratch and so satisfying. I love serving this fried rice with my Baked Crab Rangoon’s, Teriyaki Chicken Bowls, Taiwan Rice Noodles Stir Fry or  P.F. Chang’s Copycat Chicken Lettuce Wraps. You won’t need to call in take-out again because this is better, healthier for you, and cheaper!

This Shrimp Fried Rice is hearty enough that you can eat this as a main course! I love packing this rice with shrimp to make it extra wholesome and a complete meal.

INGREDIENTS TO MAKE SHIRMP FRIED RICE

  • Butter
  • Eggs
  • Sesame oil
  • Yellow onion
  • Garlic
  • Carrots
  • Peas
  • Shrimp
  • Salt + pepper
  • Rice
  • Soy sauce
  • Sesame oil
  • Green onions

HOW TO MAKE SHRMP FRIED RICE

  1. Heat 1/2 tablespoon of butter in a large saute pan or wok over medium-high heat until melted. Add eggs and and cook until scrambeled, stirring occasionally. Remove the egg from the pan and transfer to a seperate plate and set aside.
  2. Add 2 tablespoons of butter to the same pan and add onions, garlic, and carrots. Cook until carrots are softened, about 3 minutes stiring occasionally.
  3. Add the cooked shrimp, rice, and peas to the pan or wok. Season with salt, pepper, and stir until all of the ingredients are combined. Add another 1/2 tablespoon of butter and stir fry until butter has melted into the rice.
  4. In a small bowl whisk together the sesame oil, soy sauce, and powdered ginger. Pour over the fried rice and stir consistantly until all of the ingredients are cooked through and all liquid is absorbed. About 3-5 minutes.
  5. Remove from heat, and season with extra soy sauce if needed. Garnish with sliced green onions and sesame seeds. Enjoy!

SHRIMP FRIED RICE VARIATIONS 

Grain: I used brown rice because I love the nutrition boost but any short-grain white rice will work. You can also used cooked quinoa for Quinoa Fried Rice.

Protein: chicken, beef, or pork will also work perfectly instead of shrimp. You can also do a combination of proteins. If you want to make Chicken Fried Rice add cooked diced chicken breast in place of the shrimp. For Pork Fried Rice, sauté pork chops, dice, and add to the recipe. For Beef Fried Rice, add cooked ground beef, or diced cooked steak to the rice.

Vegetarian: you can make this 100% vegetarian by omitting the shrimp and adding more veggies. Simply add the extra veggies when you sauté the veggies.

TIPS FOR MAKING THE BEST SHRIMP FRIED RICE

  • Use cold or chilled rice. If you use fresh cooked rice the rice will become soggy and you don’t want soggy fried rice! You can also spread a fresh batch of rice on a baking sheet and pop it in the refrigerator for at least 30 minutes. The chilled rice will fry when it hits a hot pan.
  • I like to use small-medium sized shrimp for this fried rice so you get shrimp in every bite and you won’t have to use a knife.
  • After you add the sauces (step 4), make sure to let the rice cook for a few minutes and absorb all of the flavors. This is key to a flavorful Fried Rice!
  • Adding the butter emulsifies this recipe. The butter amplifies this recipe so be sure to use the full 3 tablespoons! This will make the rice taste just like the kind you get at a Japanese steak-house! Also butter makes everything taste perfect, right?

LEFTOVERS

Shrimp Fried Rice makes the BEST leftovers! Store leftovers in an airtight container for up to 5-7 days. To reheat, you can heat in a frying pan or microwave. If using a frying pan to reheat rice, add a drizzle of oil to coat the pan and fry until the rice is cooked through.
