Ingredients

  • 1 15 oz. can of black beans; drained and rinsed
  • 1 11 oz. can of corn; drained and rinsed
  • 1 green bell pepper; diced
  • 1/2 cup cherry tomatoes; cut in quarters
  • 1/2 cup cucumbers; diced with seeds removed
  • 2 Tbsp. shallots; diced
  • 1 tsp. garlic; chopped
  • 3 Tbsp. olive oil
  • 2 Tbsp. balsamic vinegar
  • 1 Tbsp. fresh parsley; chopped
  • 1 Tbsp. Sriracha
  • Salt and pepper to taste
  • Avocado to garnish; optional
  • Chips to dip

Instructions

  • Mix together all of the ingredients until combined. Add to a serving dish and serve with chips or use a topping for steak, chicken or pork. 
  • Optional: place the dip in the refrigerator for 1 hour to over night to let the flavors soak in.

Notes

  1. Store any leftovers in an airtight container for up to 1 week in the refrigerator. Be sure to stir the salsa together before enjoying again to combine all of the flavors.
