Healthy Valentine’s Day Trail Mix

Surprise your sweet Valentine with this healthy treat! I was at Target aka one of my favorite stores and I couldn’t help but go down the Valentine’s Day aisle. As usual, Target had so many cute things! I wanted to make my boyfriend something this weekend and instead of baking a sweet dessert (like heart shaped Valentines Day cookies that I really wanted to make), I made this healthy trail mix! It’s perfect for any any-time snack, breakfast or a sweet treat. There is a ton of crunchy, chewy and sweet in this mix!

Chocolate Chip Cookie Dough Bites

image

I brought these treats into work because one thing is for sure, everybody loves cookie dough! My favorite part of baking cookies is eating the cookie dough and I am certain, everybody else can say the same…cookie dough is simply amazing. This recipe contains no eggs so you can eat as much as you want with out feeling guilty! Try dipping them in white chocolate as an additional option.

Yield: 24

Ingredients:
2 cups flour
3/4 cup butter; melted
1/2 cup white sugar
3/4 cup brown sugar
1 tsp vanilla
1 1/2 cup mini chocolate chips
1 cup Wilton Melting Chocolate
Sprinkles

Steps:
1. In a medium sized mixing bowl, add flour, melted butter, sugars, vanilla, and mini chocolate chips. Mix until dough is formed.

2. With a mini ice cream scooper, scoop cookie dough and place on a cookie sheet lined with wax paper. Place in refrigerator for 20 minutes until dough balls are firm.

3. In a smaller bowl, melt chocolate by microwaving for 1-1/2 minutes or until melted. Using your hands, dip half of the dough ball into the chocolate, place on wax paper and top with sprinkles. Refrigerate for another 10 minutes and enjoy! There is no right or wrong way to eat these amazing bites so dig in!

Tip*** To prevent chocolate from dripping, after dipping dough ball in chocolate take a butter knife and take off access off the top. The melting chocolate is great for this because it dries almost instantly.
