Cinnamon Roll Cookie Bars

There is nothing better than the smell of cinnamon rolls baking in the oven. Cinnamon Rolls are definitely one of my favorite indulgences, especially for breakfast! When I came across this recipe I thought it was too good and easy to be true.  They  smelled exactly like cinnamon rolls baking in the oven and the only  difference is it took 10 minutes to make, thats it! You really need to try this!

Peanut Butter Brownie Bites

image
One of my favorite things to do after a long day is to come home and bake right after I workout…so ironic, I know! So today I really didn’t want to spend too much time in the kitchen and I had a box of brownie mix so then I knew exactly what I was going to bake. I always have peanut butter in my pantry and one of the most decadent combinations in this world is peanut butter and chocolate. These are extremely irresistible, just a warning!

Yield 36

Ingredients:
1 box of your favorite brownie mix
2 eggs
1/4 cup water
2/3 cup oil
1/3 cup creamy peanut butter
Sprinkles (optional)

Yield:
1. Preheat oven to 350 degrees F. In a medium mixing bowl combine brownie mix, eggs, water, and oil. Mix with an electric mixer until combined.

2. Grease cupcake pans with nonstick spray and pour brownie mix half way into pans(the mix will make 36 brownie bites). Bake for 15 minutes or until brownies are cooked. After they are baked, place on cooling rack and let cool for 10 minutes.

3. Melt peanut butter into small bowl in microwave for 30 seconds. With a small spoon, spread onto brownie bites with peanut butter until covered. The peanut butter will be slightly thick making it easy to frost without dripping. Top with sprinkles or any of your favorite toppings and enjoy!

Circus Animal Cookie Rice Krispy Treats

Circus Animal Cookies were my favorite cookies growing up. I would find in my lunch box at school that my Mom packed. They bring back so many memories of my childhood so I couldn’t resist and added them to one of my favorite treats, Rice Krispy Treats!

Circus Animal Cookie Rice Krispy Treats

Yield: 8

Ingredients:
6 Cups of Rice Krispies Cereal
16 ounces mini marshmallows
3 Tbsp butter
1 bag of animal cookies; coarsely chopped
1 cup of melted candy (white chocolate)
Sprinkles (optional)

Steps:
1. In a large bowl, add cereal and chopped cookies, mix and set aside.
2. In a large microwaveable bowl, add butter and marshmallows and microwave for 2 minutes, or until melted. With a spatula, mix marshmallow mixture until combined and add to cereal bowl.
3. Mix until cereal is coated with marshmallow mixture. In a 13 x 9 baking pan, add mixture and press down with spatula. This will make the treats firm and stay together. Set aside for 5 minutes to cool.
4. Meanwhile, melt chocolate in microwave until melted (usually 2 minutes). Pour on top of treats and spread evenly with spatula. Add sprinkles and let settle for 30 minutes, or until chocolate is hard. Once chocolate is hard, cut into squares and enjoy!!

*Too speed up the process, I always put my rice krispy treats in the refrigerator for 15 minutes before cutting and serving.

*Instead of melting chocolate chips, I but the “Chocolate/White Chocolate candy melts”, it is usually for candy because it hardens nicely and quickly. You can find them at Michael’s craft store, Target, or Safeway in the baking section near the sprinkles.
