M&M Pudding Cookies

If you’re thinking that you’ve seen this recipe on my blog before it’s because you have. I decided to use mini regular M&M’s and they came out so good and were just too good looking not to post again! The only difference with this recipe is I decided to leave the chocolate chips out and just stick with the mini M&M’s. If you want the other recipe that has the same ingredients, just different M&M’s then click here. After all, you can never have too many cookie recipes ;). The pudding mix is definitely the secret ingredient in these sweet delights. These treats also go very well with milk for dunking. Enjoy!

Ingredients:
1 stick (1/2 cup) unsalted butter; softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1-1/2 cups all purpose flour
3 tablespoons Instant vanilla pudding mix
1/2 teaspoon baking soda
1/2 teaspoon salt
1-1/2- 1 3/4 cups Mini M&M’s

Steps:
1. Preheat oven to 350 degrees F and line a large baking sheet with a silpat liner or parchment paper.

2. In a large mixing bowl cream your butter and sugars until well combined. Add your egg and vanilla mixing to combine. Add your flour, pudding mix, baking soda and salt. Mix until well combined. Fold in mini M&M’s.

3. With a mini ice-cream scooper, place dough 1 inch apart from each other. Bake for 10-12 minutes until cooked through and golden brown. Let cool for 10 minutes once done and enjoy!

Caramel Butterscotch Rice Krispy Treat Bars

For some reason I really enjoy making rice krispy treats because they are so easy to make and the possibilities are literally endless I feel like! Butterscotch isn’t an ingredient that I cook/bake with too often but butterscotch chips sure sounded and looked delicious when I was at the grocery store as they were laying  right by all the yummy chocolate chips.. So I thought, why not give it a whirl and add them to my rice krispy treats?! And boy was I sure happy I did! I highly recommend cutting these delicious pieces of heaven into bite sized pieces because they are way too good! Also, feel free to add more or less of one of the chocolate chips of your choice if you like! ENJOY AND BE CAREFUL (they’re addicting) 🙂

Ingredients:
6 cups of Rice Krispy cereal
4 cups of mini marshmallows (for extra gooey delicious-ness!)
2 ½ Tbsp butter
½ cup of caramel candy bits (you can find these by the chocolate chips in the grocery store)
¾ cup butterscotch chips (plus extra for the topping)
½ cup melting candy milk chocolate
½ cup white chocolate chips
½ cup milk chocolate chips

Steps:
1. In a microwavable bowl, melt together the marshmallows and butter for 1 minute.

2. In a large bowl, add the cereal and stir in the marshmallow mixture. ***spray spatula with non-stick cooking spray so the mixture doesn’t become too sticky. Stir in the caramel and butterscotch chips until slightly melted.

3. Spray a baking dish (I used a 9x13inch baking dish) with non-stick cooking spray. Pour the rice krispy treats and spread evenly with a sprayed spatula. (You can even spray your hands as well if you wanted to use your hands instead).

4. Melt the melting candy chocolate in the microwave for 30 seconds, or until melted and spread with spatula until it evenly coats the treats! Sprinkle white chocolate, milk chocolate, caramel, and butterscotch chips all over bars and let cool for 20 minutes. I like to put mine in the refrigerator if I am in a hurry..Cut the bars into any size you want and enjoy!

Easter Peeps Rice Krispy Treats

Rice krispy treats are so easy to make and take almost no time at all! Everyone loves peeps especially during the spring time so what a cute and fun way to add a festive Easter twist!

Yield: 20

6 cups of rice cereal
5 cups of mini marshmallows
1 Tbsp butter
1/2 cup sprinkles
1/4 cup white chocolate
20 marshmallow peeps

Steps:
1. In a large bowl add cereal and set aside. In a microwavable safe bowl melt together the marshmallows and butter until slightly melted, usually about 1 1/2 minutes. Pour marshmallow mixture into large bowl and stir with a spatula until combined.

2. Add in sprinkles until they are mixed in evenly. Then lightly***grease baking sheet with cooking spray and pour rice krispys into pan pressing down with a spatula to make it even.

3. Melt white chocolate and with a butter knife or teaspoon, dab about 1/2 tsp of white chocolate onto each peeps and place on top of rice krispy treats.

*You can place the peeps any way you like on treats. I like and recommend placing them about an inch apart from each other so when you cut them, each rice krispy square will have a peeps. SO cute 🙂

Chocolate Chip Cookie Rice Krispy Treats

Well if you couldn’t already tell…I like trying new things when I make rice krispy treats because why not?! Plus, who doesn’t love chocolate chip cookies? Not only are these amazing, these only took me less than 15 minutes to make. So easy anybody could do it. I highly recommend trying new things in the kitchen because that is the best way to come up with new ideas and there is nothing better than perfecting you own idea! 🙂 So have fun with it and enjoy!

Yield: 12

Ingredients:
4 cups rice krispy cereal
2 cups crushed chocolate chip cookies(I used mini cookies because it was easier to crush)
10 oz mini marshmallows
1 Tbsp butter
For the topping
1 cup melted chocolate
1/2 cup crushed chocolate chip cookies

Steps:
1. In a large mixing bowl, combine cereal and cookies. Mix and set aside.

2. In a microwavable safe bowl, melt marshmallows and butter for 1 1/2 minutes. Add to cereal mixture and mix until cereal and cookies are coated evenly.

3. Lightly spray a 9×13 inch baking dish and add mixture and spread evenly with a spatula (spray spatular with nonstick spray to prevent mixture from sticking.

4. Pour melting chocolate on top and spread smoothly until rice krispy treats are completely covered. Sprinkle chocolate chip cookies on top, let set for at least an hour to cool. Then cut, serve, and enjoy!
