‘Dunkaroo’ Funfetti Dip

If you grew up in the 90’s and early 2000’s then you already know that Dunkaroo’s were the best snack ever! I remember eating these in my school lunches, after school snacks, and little play dates with friends. We were all obsessed with them–they were the best. They came in a little pack with cinnamon cookies and this deliciously sweet vanilla or chocolate frosting spinkle dip. You would rip the wrapper off and then you would dunk the cookies in the dip for the perfect treat…hence the name “dunkaroos”! You just couldn’t go wrong with this old favorite snack.

This light and fluffy dip is simply amaaazzzing. It literally tastes like Dunkaroo dip except–it is lighter and so much better because you can actually enjoy it without the guilt. The best part of this whole dip is…. it’s low-fat! Not to mention, it will bring back a TON of memories as a kid, it did for me at least. To make it extra special, I used another old favorite cookie: Barnum’s Animals Cookies/Crackers to dunk them in. You can also use cinnamon gram crackers, Nilla Wafers, Teddy Grahams, Sugar Cookies, or anything you would like!

Dunkaroo Funfetti Dip

Ingredients

1 box of Funfetti cake mix

1 8 oz tube of fat-free Cool Whip

1 cup plain fat-free yogurt

1/4-1/2 cup of sprinkles

Instructions

  1. 1. In a large mixing bowl, combine all ingredients and mix with a whisk or wooden spoon. Be sure to mix until there are no lumps in the mix. Place in a serving bowl and add more sprinkles to the top :). Serve with animal cookies, gram crackers, cookies, or whatever you are in the mood for! You can't go wrong with this dip! Enjoy!

Oatmeal Raisin Cookie Dough Energy Bites

When 3:00PM rolls around…I need a snack. My snacks are usually always pretty healthy and involve a granola bar or fruit. These energy bites make the perfect little snack wherever you may be. These little tasty bites taste like oatmeal raisin cookie dough–except they are healthy and loaded with energy and protein to get you through the day! You also have nothing to feel guilty so fill up on this healthy treat the next time your in need of a snack. I also like to top mine off with some sprinkles because why not?!

Oatmeal Raisin Cookie Dough Energy Bites

35 minutes

Yield: 12 pieces

These little tasty bites taste like oatmeal raisin cookie dough–except they are healthy and loaded with energy and protein to get you through the day!

Ingredients

1/3 cup almond butter

2 Tbsp honey

1 tsp vanilla extract

1/2 tsp cinnamon

1/2 cup oats

2 Tbsp raisins

Sprinkles (optional)

Instructions

  1. In a medium sized bowl, combine almond butter, honey, and vanilla extract. Mix with a spoon until combined.
  2. 2. Add in cinnamon and oats and mix until it is combined. Refrigerate for 30 minutes and then roll into bite size pieces. Mix in some sprinkles if you want to make it look extra delicious 🙂
  3. Place back in refrigerator until you want to snack on em’. ENJOY!

Funfetti Sprinkle Cookies dipped in White Chocolate

Sprinkles just make me happy. There’s just something about them…If I could I would put sprinkles on everything 🙂 Heres a quick recipe that I always make when I need to make treats in a short amount of time. You should always have a box of funfetti mix in your cupboard at all times so you can bake these. I love using white chocolate for these cookies because of the little extra crunch when you bite into it.. just wait and try it yourself!

Ingredients:
1 box of funfetti cake mix
1 egg, 1 egg yolk
½ tsp vanilla extract
½ cup melted butter
Sprinkles
Melting white chocolate

Steps:
1. Pre-heat oven to 350 degrees F. In a large bowl, mix together the cake mix, eggs, vanilla, and butter until it becomes a cookie dough consistency. Add in as many sprinkles as you like..I added about ½ cup.

2. Bake cookies for 15-20 minutes until golden brown. Let cool for 15 minutes. Melt chocolate and dip cookies and scrape off extra chocolate with a butter knife. Top with more sprinkles and repeat until done! You can really do this any way you likeJ. You can even drizzle the chocolate over the cookies if you wanted to do it quickly. Whatever way you decided to frost your cookies, they will still taste delicious I can tell you that!

Over Night Peanut Butter Brownie Oatmeal

If you haven’t heard of Quest Bars or tried Quest Bars I highly suggest you do! They are an all-natural protein bar and they are simply amazing. They come in all kinds of delicious  flavors and one of my favorites is chocolate brownie, because well…it tastes like a chocolate brownie. Why wouldn’t anyone love that?! You won’t realize what all the hype about these little bars is until you actually try them. I love putting 1/2 of a bar in my overnight oatmeal, plus you get extra protein.

Yield: 1

Ingredients:
1/4 cup oats
1/2 cup almond milk (vanilla flavored)
1 Tbsp peanut butter
1 tsp honey (for an extra sweet kick)
1/2 tsp cinnamon
1/2 Chocolate Brownie Quest Bar; chopped (or rolled into pieces)
1 Tbsp almonds
Sprinkles (optional)

Steps:
1. Mix all ingredients together and place in refrigerator overnight. Top with sprinkles in the morning and waaahlaaaa! What a healthy and delicious way to start a day without any guilt.

Easter Peeps Rice Krispy Treats

Rice krispy treats are so easy to make and take almost no time at all! Everyone loves peeps especially during the spring time so what a cute and fun way to add a festive Easter twist!

Yield: 20

6 cups of rice cereal
5 cups of mini marshmallows
1 Tbsp butter
1/2 cup sprinkles
1/4 cup white chocolate
20 marshmallow peeps

Steps:
1. In a large bowl add cereal and set aside. In a microwavable safe bowl melt together the marshmallows and butter until slightly melted, usually about 1 1/2 minutes. Pour marshmallow mixture into large bowl and stir with a spatula until combined.

2. Add in sprinkles until they are mixed in evenly. Then lightly***grease baking sheet with cooking spray and pour rice krispys into pan pressing down with a spatula to make it even.

3. Melt white chocolate and with a butter knife or teaspoon, dab about 1/2 tsp of white chocolate onto each peeps and place on top of rice krispy treats.

*You can place the peeps any way you like on treats. I like and recommend placing them about an inch apart from each other so when you cut them, each rice krispy square will have a peeps. SO cute 🙂
