Easter Bunny Peep Pops

Spring is finally here–happy first day of Spring everyone! I love it when I can whip up a sweet treat that only takes a few minutes and has a few ingredients…. and most importantly is super cute like these pops!

These cute Easter bunnies are so adorable and so easy to make! They are also fun to make because you can make them however you want! I love marshmallows so I love when I see Peeps displayed at grocery stores this time of year. I feel like Peeps are only around for such a short amount of time and they don’t get used as much as they should. Kids will love this recipe, I know my 2 year old Goddaughter did! When I gave her a treat bag full of these, she was so happy to see this colorful treat and the first thing she ate was the Peep, of course!

These treats are so adorable and will put a smile on anyone!

Ingredients

12 pretzel rods

12 Peeps (I used blue and pink bunnies)

1 cup white chocolate candy melts

Sprinkles

Instructions

  1. Line a baking sheet with foil.
  2. Melt chocolate in microwave for 1 ½ minutes, stirring every 30 seconds until melted and smooth. Pour melted chocolate in a drinking glass or mug.
  3. Dip and or spoon each rod to cover about ½ the pretzel in the chocolate.
  4. Scrape excess chocolate off on edge of the cup. Smooth out chocolate with a spoon or knife so it is dipped evenly and smoothly on the rod.
  5. Sprinkle each rod with your favorite sprinkles and place on baking sheet. Spoon about a ½ tsp. of melted chocolate on the back of a peep and position on rod to set. Repeat until finished!
  6. Let each rod set for about 15 minutes, you can also place them in the refrigerator to cool and harden faster. Enjoy these adorable sweet treats!

There is just something about Peeps that makes me happy, maybe because they are so cute! Does anyone else feel that every Holiday comes and goes too fast? I always feel so rushed to enjoy all the festive treats that come once a year, so I might as well make them when I can! Who doesn’t love a cute and delicious sweet treat anyways?

 

Cupcake Muddy Buddies

I loooooove Muddy Buddies and I love cupcakes, so why not combine the two? Muddy Buddies have always been a favorite of mine because its so easy to make, it’s delicious, and it reminds me of being in college when I wanted a sweet snack. It doesn’t get much easier by basically just throwing all of the ingredients in a large plastic bag, shake, and that’s it! These crispy bites resemble a sweet sprinkled vanilla cupcake and they are extremely addicting so beware!

Cupcake Muddy Buddies

If you love sprinkled cupcakes just as much as I do, you will love these crunchy bites of sweetness!

Ingredients

6 cups of Rice Chex cereal

12 ounces of white chocolate candy melts

1 tsp butter extract

1 cup of french vanilla cake mix

1/4 cup powdered sugar

1/4 cup of sprinkles; use as much as desired 🙂

Instructions

  1. Pour cereal into a large gallon zip-lock bag. In a microwavable bag, melt chocolate and butter extract for 1 minute, then stir until melted.
  2. Pour melted chocolate into bag and shake until cereal is covered in chocolate mixture. Add sprinkles and shake.
  3. Add in cake mix and powdered sugar and shake until completely coated. Add more sprinkles if you would like! In my option, you can never have too many sprinkles in/on anything.
  4. Transfer covered muddy buddies into cookie sheet and discard the excess powder. *An easier way to discard powder is to place a cooling rack on the cookie sheet before placing muddy buddies on them. Enjoy!

Cake Batter Sprinkle Cookies

For all you sprinkle lovers out there…this is for you. This recipe is also for all of those who love to bake but don’t have time–here you go. There are only 6 simple ingredients in these tasty cookies. These cookies taste like a cake, cookie, and cupcake combined into one bite! I made these for a work cookie-exchange and they were a hit! They also look pretty too 🙂

Cake Batter Sprinkle Cookies

Cake Batter Sprinkle Cookies

It doesn't get any easier than these cake mix cookies! They are sweet, chewy, and loaded with tons of sprinkles!

Ingredients

1 box of vanilla cake mix

1 tsp baking powder

2 eggs

1/2 cup vegetable oil

1/2 tsp vanilla extract

1 cup sprinkles

Instructions

  1. Preheat oven to 350 degrees F. In a large mixing bowl, mix together the cake mix and baking powder.
  2. In a small bowl, mix the eggs, oil, and vanilla extract.
  3. Add the egg mixture to the cake mixture and stir until there are no cake mix white pockets. Make sure the batter is smooth and fluffy. Fold in the sprinkles until combined (save some for the topping).
  4. With a mini ice-cream scooper, scoop the cookie dough onto a lightly greased cookie sheet 1 inch apart. Top each cookie with more sprinkles and bake for 9-12 minutes (they may look under-cooked). Place on cooling rack and let cool for 10 minutes. Enjoy each bite!

Circus Animal Cookie Blondies

So this recipe is a Pinterest inspiration. Once I came across this recipe, I knew I had to make it–especially because I used to love good old fashioned Circus Animal Cookies! Mostly because they were pink and had sprinkles, and always remind me of a childhood treat. Anyways, I used a basic butter cake recipe and added a ton of sprinkles, then topped it with Circus Animal Cookies.

Imagine a buttery cake loaded with sprinkles, and then topped off with old fashioned Circus Animal Cookies! It's a one of a kind unique and tasty treat!

Ingredients

3/4 cup unsalted butter; room temperature

1 cup sugar

3 eggs

1 1/2 tsp vanilla extract

2 cups all-purpose flour

1/2 tsp salt

2 cups of Circus Animal cookies

1/2 cup sprinkles

Instructions

  1. Preheat oven to 325 degrees F. In a mixer, cream the butter and sugar until creamy and fluffy. Add eggs, one at a time until combined. Add vanilla extract and mix for another 30 seconds until mixture is smooth and combined.
  2. Add the flour and salt and mix until the dough starts to come together. It will be a thicker cake batter. Fold in the sprinkles until combined.
  3. Grease a 9 x 13 inch baking dish and pour batter evenly. Top with cookies and more sprinkles. (You may also add chop cookies to your batter as well).
  4. Bake for 30 minutes or until g0lden brown. Let cool on wire rack. Slice into square and serve. Enjoy!

These are my new favorite cookies. Not only do they resemble a cheesecake flavor, they also melt in your mouth with a perfect light richness in flavor. These cookies make the perfect sweet treat when you are wanting a bite of cheesecake and a cookie…I love combining two completely different treats into one simple recipe.

Cheesecake Sprinkle Cookies

Cheesecake Sprinkle Cookies

Buttery, chewy, moist, and perfect. It's like the perfect sugar cookie with a sweet cheesecake bite..loaded with sprinkles.

Ingredients

1 cups of unsalted butter; softened

1/2 cup granulated sugar

1/2 cup brown sugar

1 large egg

1 tsp vanilla extract

1 1/2 cup all-purpose flour

1 package of cheesecake pudding mix (if you can't find it at your

grocery store, you can use vanilla flavor)

1/2 tsp baking soda

1 1/2 cups white chocolate chips

1/4 cup sprinkles

Instructions

  1. Preheat oven to 350 degrees F. In a large mixing bowl, cream the butter and sugars together. Slowly beat in the egg and vanilla extract until combined (it will look grainy).
  2. Slowly add in the flour, pudding mix, and baking soda and mix until cookie dough is formed. With a wooden spoon or spatula, add in the white chocolate chips and sprinkles until combined evenly throughout the dough.
  3. Place cookie dough in the refriderator to set for about 30 minutes, or until cookie dough is firm.
  4. With a mini ice-cream scoop (this is how your cookies will come out perfectly shaped), scoop cookies and place on a cookie sheet lined with a silpat mat of parchment paper. Place about 1 inch from each other and bake for 12-15 minutes until cookies are golden brown. Enjoy!
