Roasted Rosemary and Garlic Almonds

Almonds make the perfect healthy snack and they are great on the go! Naturally the easiest way to snack on almonds is to eat them raw/natural. The key to roasting your own almonds is to never underestimate the baking time. This has happened to me more than once and it’s always so disappointing when you burn a batch..SO don’t let this happen to you. Once the timer goes off, take them out of the oven even if they don’t look roasted. They will continue to cook as they cool. These are savory in flavor and you don’t have to feel guilty since these are loaded with protein, fiber, healthy fats, and other nutrients. Enjoy!

Roasted Rosemary and Garlic Almonds


2 cups of whole (natural) almonds

2 Tbsp extra virgin olive oil

3/4 tsp sea salt

1/2 tsp granulated garlic

1 Tbsp finely chopped rosemary


  1. Preheat oven to 300 degrees F.
  2. Combine all of the ingredients in a bowl and toss to coat all almonds. Arrange on baking sheet lined with foil. Bake for 20 minutes or until lightly toasted. Let almonds cool to room temperature.

Buffalo Ranch Chex Mix

You just can’t go wrong with good old fashioned Chex Mix, it even gets better when it’s flavored with ranch seasoning and spicy buffalo sauce! The fun part about making Chex Mix is you can add your favorite fixins’ to it–the possibilities are endless.. Add this to your next Super Bowl party!


Buffalo Ranch Chex Mix

Buffalo Ranch Chex Mix


2 cups whole wheat chex cereal

2 cups corn or rice cereal

2 cups of pretzels

2 cups of garlic flavored pita chips (or bagel chips)

2 cups of gold fish

1 cup Spanish peanuts

1/3 cup buffalo wing sauce

1 package of Ranch seasoning mix

1 Tbsp Worcestershire sauce

6 Tbsp butter; unsalted


  1. Preheat oven to 250 degrees F. Place chex cereal, pretzels, pita chips, gold fish, and peanuts in a large bowl and set aside.
  2. In a microwavable bowl, microwave wing sauce, ranch mix, Worcestershire sauce, and butter for about 30-40 seconds until melted, then stir.
  3. Pour over chex mix until well coated. Pour mixture onto baking sheet and bake for 45 minutes, stirring every 15 minutes.

Spicy Garlic Hummus


Hummus is one of my favorite snacks and sometimes I even make a meal out of it. This spicy garlic recipe is a go-to snack/dinner on busy nights. Sometimes this even makes leftovers for snacks/lunches the next day!

Yield: 6

1 can garbonzo beans; rinsed and washed
3 cloves of garlic
3 Tbsp olive oil
1-2 Tbsp fresh squeezed lemon juice
1 tsp salt
1 tsp black pepper
1 tsp crushed red pepper

1. Mix all ingredients in a food processor until smooth and creamy. Serve with your favorite pita chips or make it extra healthy and serve with my personal favorite; cucumber slices!

Grilled Guacamole


I can’t believe yesterday was my first time coming up with the idea to grill my avocados before making guacamole. It added a smokey flavor to the dip and this is a great snack/appetizer to make for any occasion, especially on a football game day!

Yield: 8

4 avocados
1 Tbsp olive oil (for the grill)
1/4 cup red onions
1 lime
1 tsp salt
1/2 tsp pepper
1/4 cup cilantro (optional)
1/4 cup tomatoes (optional)

1. Heat grill on medium heat. Cut avocados in half and take pits out. Sprinkle salt, pepper, and the juice of half of a lime. Place avocados faced down on grill and let sit for 5 minutes, or until you could see grill marks.
2. In a small bowl, spoon out avocados, squeeze the juice of the other half of the lime, onions, cilantro, salt and pepper. Smash together with a fork until slightly chunky. Serve with tortilla chips, amazing!
