Smoked Salmon Flatbread

Smoked salmon is one of my favorite indulgences so I did not waste any time to make this! I first starting eating it when I was little with my bagels and I’ve been in love with it ever since. I was inspired to make this flatbread when I took my Nana out to lunch as a late Valentine’s gift at this cute little restuarnt called Cafe Rustica in Carmel Valley. We ordered a smoked salmon flatbread as an appetizer and it was delicious! I love finding and trying great dishes at restaurants and making a copycat version of my own.

Yield: 6

Ingredients:
5-6 ounces smoked salmon or lox
2 Tbsp Boursin garlic herb cheese spread
1 Tbsp chives; chopped
1 Tbsp capers
5 thinly sliced red onions
1 sheet of lavish bread
Pepper
Lemon (optional)

Steps:
1. Preheat oven to 400 degrees F. Place lavish bread on a baking sheet and bake for 5-7 minutes or until slightly crispy.

2. Spread cheese on bread evenly, now here is the fun part…add your smoked salmon, capers, onions, and chives. Sprinkle with black pepper and a squeeze of lemon (optional)! You can add as much or as little to any of the ingredients, its totally up to you. Cut into 6 pieces and enjoy this mouthwatering appetizer!

Pesto & Almond Crusted Salmon

If you weren’t aware, today is National Almond Day so of course I had to make this dinner. My Dad is in the almond business so I am definitely a frequent almond eater and I love them! I always have a box or two in my pantry and they always seize to make the perfect snack. Not to mention all of there amazing health benefits! This recipe is out of this world and is so simple to make even though it looks fancy. I topped my salmon on a bed of fresh spinach and it goes well with just about any salad. Have fun and make your own fancy dinner at home,  to be honest I feel like making fancy or gourmet food can seem a little intimidating but I can promise you its not! Try this recipe and you will be amazed!

Yield: 2

Ingredients:
3 wild salmon fillets (6-7 ounces each)
1 tsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 cup Pesto (see my recipe to make it from scratch, don’t worry its easy!)
1/2 cup coarse chopped roasted almonds
1 fresh lemon

Steps:
1. Preheat oven to 400 degrees F. In a baking dish, sprinkle salmon fillets with olive oil, salt, pepper, and garlic powder. Make sure the skin is faced down.

2. Place salmon in oven for 10 minutes. Then take salmon out and spread pesto on with a spoon. Top with coarse chopped almonds and bake for another 15 minutes. Once done top with freshly squeezed lemon juice and enjoy this simply hearty and healthy meal!image

Smoked Salmon, Avocado, & Spinach Panini

After my workout this morning I was craving my favorite bagel, a lox bagel! I try to stay away from bagels as much as possible and almost never buy them just because of all the carbs..but that doesn’t stop me from creating a healthier version of my favorite breakfast/lunch. This panini sandwich can almost be eaten for any meal of the day….not to mention it is healthy for you and it is a great way to end 2013! Happy New Years Eve!

Yield: 1 or 2 (depending on how hungry you are!)

Ingredients:
2 slices of whole wheat bread
1 laughing cow cheese wedge (I used French Onion flavor)
3 ounces smoked salmoin
1/2 avocado; sliced and seasoned with salt and pepper
1/4 cup spinach; about 8-10 leaves
1 tsp olive oil

Steps:
1. Heat a skillet with olive oil. Spread 1/2 cheese wedge on each slice of bread. Add avocado, smoked salmon, and spinach and grill on skillet on each side for about 2 minutes (or until grill marks are made). I used the bottom of a frying pan to press on the sandwich while grilling to get good looking grill ridges! Flip sandwich and repeat for 2 more minutes. Slice in half and enjoy!

Sesame Salmon Kabobs

This is the perfect dinner if you want to eat healthy and light! Also it’s super easy and quick to make!

Yield: 4

Ingredients:

2 large fillets of wild salmon; cut into 1 inch cubes
1 large lemon
1 zucchini; cut into
1/4 inch thick pieces
1/2 cup red onions; chopped into 1 inch pieces
Pinch of sea salt
Pinch of lemon pepper
Pinch of onion powder
1 Tbsp sesame seeds

Steps:
1. Make sure to pull out any bones from the salmon, then skin, and cut into 1-inch thick cubes

2. Cut zucchini into 1/4 inch thick slices and place in microwave proof bowl with 1/2 cup of water and cook for 2 minutes! (This is a little trick to cook the zucchini faster since the salmon only takes a few minutes to cook!)

3. Slice a lemon thinly and then cut into half pieces and then slice red onion into 1 inch pieces.

4. Here is the fun part!…..Start assembling salmon, lemon, red onion, and zucchini pieces in the order you prefer on a bamboo skewers (I like to cut my skewers in half because it is easier to cook on grill or frying pan!) Sprinkle salt, lemon pepper, onion powder, and sesame seeds on kabobs before placing on the grill.

5. Once skewers are ready, place on lightly greased grill (or frying pan works just as good too) on medium heat and cook for 5 minutes on each side. You will notice the kabobs are done when the salmon turns from a red orange color to a lighter orange color.
