Chocolate Chip Cookie Rice Krispy Treats

Well if you couldn’t already tellā€¦I like trying new things when I make rice krispy treats because why not?! Plus, who doesn’t love chocolate chip cookies? Not only are these amazing, these only took me less than 15 minutes to make. So easy anybody could do it. I highly recommend trying new things in the kitchen because that is the best way to come up with new ideas and there is nothing better than perfecting you own idea! šŸ™‚ So have fun with it and enjoy!

Yield: 12

Ingredients:
4 cups rice krispy cereal
2 cups crushed chocolate chip cookies(I used mini cookies because it was easier to crush)
10 oz mini marshmallows
1 Tbsp butter
For the topping
1 cup melted chocolate
1/2 cup crushed chocolate chip cookies

Steps:
1. In a large mixing bowl, combine cereal and cookies. Mix and set aside.

2. In a microwavable safe bowl, melt marshmallows and butter for 1 1/2 minutes. Add to cereal mixture and mix until cereal and cookies are coated evenly.

3. Lightly spray a 9×13 inch baking dish and add mixture and spread evenly with a spatula (spray spatular with nonstick spray to prevent mixture from sticking.

4. Pour melting chocolate on top and spread smoothly until rice krispy treats are completely covered. Sprinkle chocolate chip cookies on top, let set for at least an hour to cool. Then cut, serve, and enjoy!

Wild Rice & Veggie Stuffed Bell Peppers

Yield: 4

Ingredients:
2 large bell pepppers; washed
1 tsp olive oil
1/2 yellow or white onion; chopped
1 garlic clove; chopped
2 zucchinis; chopped
3 cups spinach; chopped
2 cups wild rice; cooked (I get mine from trader Trader Joe’s, all you do is microwave it)
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1/2 tsp onion powder
1/4 cupp parmesean cheese

Steps:
1. Pre-heat oven to 400 degrees F. Cut bell peppers in half and remove the seeds from the middle. Sprinkle inside with a pinch of salt and pepper and drizzle olive oil. Roast peppers for 30 minutes or until cooked.

2. In a large frying pan, add olive oil, onions, salt, pepper, garlic powder,Ā onion powder, choppedĀ garlic, and zucchini. Sautee for 5 minutes and then add chopped spinach and rice. Cook until spinach is wilted. Once peppers are done scoop rice and veggie mixture into peppers evenly and sprinkle of parmesean cheese. Bake for 10 minutes and serve!
