Sugar Cookie Fruit Tart

If you’re looking for a something extremely quick and easy to make, this is it! You can use any fruit (I would recommend using what’s in season for the best and sweetest taste). I just love this dessert so much and I know you will too!

Ingredients:
Sugar Cookie dough (I used Pillsbury)
1 package of French Vanilla instant pudding
Fresh berries (I used strawberries, blueberries, and raspberries)

Steps:
1. Preheat oven to 350 degrees F. Roll out dough, or press with your hands into a 9×13 inch baking dish. Bake for 15-20 minutes, then let cookie cool completely.

2. In the meantime, make instant pudding by following directions on box. Once cookie is cooled, place on serving dish and spread pudding to your liking. Then..time to fix it up with berries! Place berries on tart anyway that you want:) Delicious, easy, quick, and you can really serve it any way you like.

Perfect M&M Pudding Cookies

Easter is right around the corner so making these cookies was only necessary. Who knew that by adding a few tablespoons of pudding mix would make these cookies out of this world! I also made these in about 10 minutes and so can you. You can make these all season long by adding different M&M’s. Of course I went with the spring edition this time. I love how these cookies make the perfect cookie shape after you bake them. Did I mention they also go perfect with a tall glass of milk?!

Ingredients:
1 stick (1/2 cup) unsalted butter; softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1-1/2 cups all purpose flour
3 tablespoons Instant vanilla pudding mix
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup chocolate chips
1 or 1-1/2 cups M&M’s(I used the Spring edition!)

Steps:
1. Preheat oven to 350 degrees F and line a large baking sheet with a silpat liner or parchment paper.

2. In a large mixing bowl cream your butter and sugars until well combined. Add your egg and vanilla mixing to combine. Add your flour, pudding mix, baking soda and salt. Mix until well combined. Fold in chocolate chips and M&M’s.

3. With a mini ice-cream scooper, place dough 1 inch apart from each other. Bake for 10-12 minutes until cooked through and golden brown. Let cool for 10 minutes once done and enjoy!

Vanilla Maple Chia Seed Pudding

If you love tapioca pudding and eating healthy you will love this! This tastes just like tapioca pudding except it has less than 200 calories per serving and is loaded with all kinds of essential nutrients your body needs such as fiber and omega-3 fatty acids. You can add all sorts of extra toppings such as chopped apples, bananas, berries, or even almonds! I usually just use what I have in my fridge. A dash of cinnamon also goes well with this healthy breakfast or snack treat!

Yield: 4

Ingredients:
1 cup unsweetend almond milk
1 tsp vanilla extract
2 tsp pure maple syrup
1/2 cup vanilla nonfat greek yogurt
1/4 cup of chia seeds
1/4 cup fresh fruit topping (your choice)
*you can buy chia seeds at any nutrition store such as whole foods.

Steps:
1. In a bowl, whisk together almond milk, yogurt, vanilla, and maple syrup. Add chia seeds and and mix until combined.

2. Put in fridge for 45 minutes until mixture become thick like a pudding. Serve and top with cinnamon and fresh fruit or/and almonds! This is nutritious and delicious!

*You can even make this the night before for a quick breakfast!
