Mini BLT Pizzas

One of the perks about blogging is I get the opportunity to try out different products and participate in contests. This time, I had the opportunity to work with Toufayan Bakeries who carries a vast variety of products such as pita breads, pita chips, wraps, flat breads, bagels, croissants and more! I was sent 8 different flavors of pita bread and I though this recipe would work perfectly with the Classic White pita bread (the Whole Wheat would work great too). Pita bread is great because of its versatility and ability to create so many types of snacks/meals out of it! Also and most importantly, it has a great nutritional value added to them–each pita has 6 gram of protein in it and is only 150 calories.

For this creation, I was originally going to post a “BLT Sandwich” recipe using the pita bread as the “sandwich bread”. Then I wanted to add cheese to the recipe and realized a pizza was the way to go! I usually don’t like too many different toppings on my pizza—less is more to me. But not in this case. I love my bacon extra crispy so there is a ton of crunch and a lot of flavor in this. The bacon, cheese, tomato, lettuce and dressing make this combination come together and it’s pair perfectly!

Mini BLT Pizzas

Yield: 4 Servings

Mini BLT Pizzas

Pizza night just got a lot easier and delicious!

Ingredients

4 Toufayan’s Pita Bread’s (I used classic white)

½ cup tomato sauce (you may not use it all)

1/2 cup sharp cheddar cheese; shredded

4 slices of bacon

1 roma tomato; thinly sliced

4 cherry tomatoes; sliced in quarters (optional)

1 head of romaine lettuce; shredded

3 Tbsp. mayonnaise

½ tsp. olive oil

¼ tsp. garlic powder

Salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees F. Place pita breads on a lined baking sheet with foil.
  2. Place strips of bacon on a cold frying pan. Do not have them overlap too much. Cook bacon low and slow. Once you hear the bacon crackle and see fat release, flip bacon with tongs. Keep flipping bacon until evenly brown. Place cooked bacon on a cooling rack layered with paper towels (so access fat can be absorbed). When bacon is cooled, crumble into pieces.
  3. Add about 1 Tbsp. of tomato sauce on each pita bread. Swirl it around until covered, then sprinkle cheddar cheese and about 3 sliced of tomatoes. Place in oven and bake until cheese is melted for about 5-10 minutes.
  4. In the meantime, in a bowl toss the lettuce, mayonnaise, garlic powder, salt and pepper until well combined. Set in fridge until pizza is ready.
  5. Once cheese has melted, top the mini pizzas with bacon, lettuce and more tomatoes! Enjoy!!! I apologize in advanced if I got you hooked on this—you can always use turkey bacon for a healthier alternative.

This pizza has all the components of one of the most popular sandwiches around—even the mayo, and I even added some olive oil to the dressing to make it even more creamy. The mayo dressing really gives this recipe a richer taste that makes all your taste buds happy.

Fig & Prosciutto Pizza

This is a semi-homemade recipe that I kind of just threw together. This is great if you are not wanting to spend a ton of time in the kitchen or if you are on a press for time. I love the combination in these ingredients. The sweet fig jam, the salty prosciutto, and the peppery arugula will take your taste buds on a whole other level.

Sweet and salty goodness make this pizza perfection!

Ingredients

1 pre-made/ pre-baked pizza dough (thin crust, preferred)

1-2 Tbsp fig jam

6 slices of prosciutto

a handful of arugula

2 fresh figs; quartered (optional)

Instructions

  1. Heat your pre-made pizza dough in the oven until warm and toasted. Top with fig jam, sliced prosciutto, arugula, and fresh figs. Cut pizza into 6-8 slices and enjoy!

Brie & Prosciutto Pizza

I love pizza and sometimes I forget how simple and easy it is to make at home! I think the Trader Joe’s pizza dough is the best because it’s pre-made and they always make my pizza’s turn out perfect….It also saves a ton of time. Prosciutto, pesto, and and Brie cheese pair perfectly together especially on a pizza…it’s the perfect bite!

Brie and Prosciutto Pizza

Ingredients

1 package of Trader Joe's whole wheat pizza crust

1/4 cup pesto sauce

1/4 cup brie cheese; cubed and skin removed

1/4 cup red onions; sliced and then cut in half

1/4 cup fresh spinach

1/4 tsp crushed red chili flakes

6 slices of prosciutto; torn into pieces

Instructions

  1. Follow the steps on the packaging for the pizza dough. I lightly floured the counter surface and dough ball, and let the dough rest for 20 minutes. Pre-heat the oven to 450 degrees F. I floured a baking sheet and stretched the dough into a rectangular shape.
  2. With a spoon, spread the pesto sauce evenly onto the whole pizza. Top with brie cheese, onions, spinach, and crushed red chili flakes. Brush the edge of the crust with olive oil to get a golden brown crust.
  3. Bake for 12-15 minutes until golden brown. Once baked and fully cooked, let cool for 5-10 minutes. Top with prosciutto and slice into square pieces. Enjoy!

Jalapeno Popper Pizza

If I had to describe this pizza it would be, AMAZING. There is just no way you can go wrong with this. I haven’t had the best experience cooking with jalapenos but this sounded too good not to try and it came out perfectly. This is so easy to make it totally tastes just like a jalapeño popper in a pizza! As mentioned in the recipe  below, crispy bacon pieces would be a great addition to this pizza!

Jalapeno Popper Pizza

Jalapeno Popper Pizza

Spicy and cheesy pizza with a jalapeño popper twist. Two favorites in one bite!

Ingredients

1 ball of pizza dough; homemade or store bought

2 jalapenos; sliced and seeds remove (unless you want it extra spicy)

1 Tbsp extra virgin olive oil

2 Tbsp yellow corn meal

6 ounces of cream cheese; softened

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

1 1/2 cups grated Monterey Jalapeno Jack Cheese

5-7 large slices of Havarti cheese

1 Tbsp fresh chives; sliced

Instructions

  1. Preheat oven to 450 degrees F. Lightly coat a pizza pan or baking sheet with olive oil. Work the pizza with your hands to form a pizza dough about 10 inches in diameter. Transfer to pan and sprinkle cornmeal to the bottom of the pizza/baking dish (this will make the bottom and edges crispy).
  2. In a small bowl add garlic powder, onion powder, salt, and pepper to cream cheese until combined.
  3. Spread the cream cheese over pizza dough evenly. Leave about 3/4-1 inch of a border. Add havarti slices, then sprinkle shredded jack cheese, top with jalapenos, and chives.
  4. Place in oven and bake for 15-20 minutes of until golden brown.
  5. *if you love bacon, I highly reccomend adding freshly chopped bacon to the top of these for an extra deliciousness!

Cauliflower Crust Pizza with Spinach & Sausage

If you don’t crave pizza every now and then you’re lying…Unless you don’t live in America because there is just something about it that we all crave. Pizza as we all know isn’t the healthiest so I made this into a low-carb meal by making a cauliflower crust instead of a pizza dough. It’s almost too good to be healthy to be honest..and you can customize your own pizza to your own likings! Also, did I mention this is probably easier to make than a regular pizza?

Ingredients:
1 head of a small to medium cauliflower
1 egg
1/4 cup italian seasoned bread crumbs
1/4 cup mozarella cheese (or cheddar)
1 Tbsp grated parmesan cheese
1 tsp garlic powder
1 tsp salt
1/2 tsp pepper
1/2 tsp dried basil
1/2 tsp oregano (pinch with your fingers)
2 Tbsp tomato sauce
Mozzarela Cheese (I used a little less than 1/2 cup, but use as much as you desire)
Use your favorite toppings! I used a roasted garlic artichoke chicken sausage I got at Trader Joe’s.

Steps:
1. Preheat oven to 450 degrees F. Cut off the florets and stem of cauliflower. Place in food processor until it looks almost powdery. Place cauliflower in a microwavable save bowl and microwave for 8 minutes. Let cool for another 2 minutes and add egg, breadbrumbs, cheeses, garlic powder, salt, pepper, basil, and oregano. Mix with a wooden spoon until combined and it has formed an almost dough consistency.

2. TIME TO BAKE! Line a baking sheet with a silicon mat or use parchment paper. Form cauliflower crust in a large round circle by pressing with your hands. If your hands are super sticky add more breadcrumbs to the dough. Bake for 15 minutes until crust is golden brown.

3. Now for the finale! When crust is fully cooked, add your tomato sauce, cheese, and your toppings. Bake for another 5 mintues until cheese is melted and there you go! You can definitely feel good about eating this and you get an even bigger benefit by getting all the nutritous vitamins from cauliflower! It’s a win-win meal 🙂
